This quinoa chicken salad combines protein-rich quinoa, tender chicken, roasted sweet potatoes, crunchy almonds, and dried cherries for a hearty and nourishing meal. Tossed with a creamy almond white balsamic dressing, it’s packed with flavor and perfect for meal prep or a fresh, satisfying lunch.
Ingredients
For the Salad
- 8 cups Baby Spinach
- 1/2 cup Shredded Carrot
- 1 1/2 cups Shredded or Cubed Chicken (try this Citrus Roast Chicken)
- 1 1/2 cups Roasted Sweet Potatoes (I like these Roasted Sweet Potatoes With Garlic and Sage)
- 1/2 cup Whole Almonds
- 1/2 cup Blue Cheese Crumbles
- 1/2 cup Dried Cherries
- Creamy Almond White Balsamic Dressing, recipe follows
For the Creamy Almond White Balsamic Dressing
- 4 1/2 tablespoons Extra Virgin Olive Oil
- 3 tablespoons White Balsamic Vinegar
- 1 tablespoon Agave
- 1/4 teaspoon minced Garlic
- 3 1/2 tablespoons Sliced Almonds
- 1/4 teaspoon Salt, or to taste
- 1/8 teaspoon Black Pepper, or to taste
Instructions
Preparing the Ingredients
- Prepare chicken and sweet potatoes according to recipe instructions, or use leftovers if you have them on hand.
- Wash and dry the spinach, shred the carrots, and crumble the blue cheese.
Assembling the Spinach Quinoa Chicken Salad
- In four low and flat bowls, arrange the salad ingredients in separate sections, making sure to divide the amounts evenly between the bowls.
- Start with the spinach and then work in a clockwise pattern around the bowl with quinoa, sweet potatoes, almonds, chicken, cherries, blue cheese, and carrots. Set aside.
Making the Dressing
- Combine the olive oil, white balsamic vinegar, agave, garlic, sliced almonds, salt, and pepper in a blender or small, 4 cup size, food processor and blend until the dressing is smooth.
- Scrape the sides as needed to ensure the ingredients are evenly blended together.
Serving
