Easy Spinach & Mushroom Lasagna

Spinach Mushroom Lasagna is an easy but impressive vegetarian dinner recipe that’s perfect for both holiday entertaining and weeknight dinners – especially a large crowd.

PREHEAT

1. Preheat oven to 375ºF.

PREP NOODLES

2. Cook lasagna noodles according to package directions, tender but still firm. I like to cook a few extra in case any of them rip during the cooking process. Drain noodles; rinse with cold water. Drain well.

COOK

3. Meanwhile, in a large skillet cook onion, mushrooms, and garlic in hot butter till tender but not brown. Make sure the mushrooms have released all of their liquid.
