Grilled Chimichurri Skirt Steak

Skirt steak is first marinated in an herby chimichurri sauce then grilled quickly over high heat. The resulting Grilled Chimichurri Steak is juicy, tender, and packed with flavor!

Serve the steak as is, or add to your favorite salads, sandwiches, grain bowls, tacos, and more!

PREP MARINADE

1. Combine olive oil, red wine vinegar, garlic, and lemon zest in a food processor. Pulse until garlic is minced. Add green onion, parsley, and basil; pulse again. Stir in salt, pepper, and red pepper flakes. Reserve ¼ cup marinade in the fridge.

MARINATE

2. Place skirt steak in a bag or dish, coat with marinade. Refrigerate for 3-12 hours.

BRING TO  ROOM TEMP

3. Transfer the reserved marinade from the refrigerator to the counter and let sit at room temperature until you plan to serve the steak.
