Greek Chicken Tzatziki Bowls

PREP SALSA

Chop veggies: Dice tomatoes, cucumber, and red onion. Mince garlic. Mix: Combine with lemon juice, zest, and oregano. Season. Chill: Cover and refrigerate 30 mins–2 hours.

MARINATE

2. Marinate and cook the chicken as instructed.

SLICE

3. After the chicken has rested, slice it so it stays tender and juicy. Find the direction of the grain (the muscle fibers) and cut across it rather than along it. Holding the knife at a slight angle helps create wider, more tender slices. Aim for pieces about 1/4 to 1/2 inch thick.
