Grilled Bruschetta Chicken

MARINATE

1. Mix balsamic vinegar, olive oil, honey, mustard, garlic, basil, salt, and pepper. Coat chicken in marinade, refrigerate for 8-48 hours, turning occasionally.

PREP TOMATOES

2. Chop the tomatoes, then sprinkle with salt and transfer to a colander set over a bowl. Gently stir and let drain for at least 30 minutes. Can be done up to 2 hours in advance, however.

COOK GARLIC

3. While the tomatoes drain, warm the garlic and the olive oil in a small sauté pan set over low heat. Cook, stirring periodically for 5 - 7 minutes, or until fragrant. Remove from heat and cool.
