Tex-Mex Oven Fries with 2 Dipping Sauces
I’ve been wanting to tweak my favorite recipe for oven baked sweet potato fries into something with a little bit different flavor profile.
Thinking of our Fajita Burgers with Peppers and Guacamole convinced me that I should create some Spicy Tex-Mex Fries with some fun dipping sauces to serve with them.

Madeline loves oven baked sweet potato fries.
They are a great way for me to get her to eat extra vegetables without her caring that she is eating extra vegetables.
I happen to like oven baked sweet potato fries a little bit myself, but this time I decided to mix things up and use a combination:
half sweet potatoes and half russet potatoes to give some color contrast to the fries.
Both varieties of sliced potatoes are tossed with melted coconut oil, sprinkled with salt and chipotle powder and baked, then tossed with a cilantro lime garlic mixture as soon as they come out of the oven.

Instead dipping these Tex-Mex Oven Fries in the traditional ketchup, we dipped them in 2 new dipping sauces that I whipped up in just a couple minutes:

I ate a few, ok more than a few, with my lunch after photographing them.
And again when I served them for dinner last night with those tasty burgers.
Eric, who is normally not a french fry kind of guy, was spotting serving himself seconds and thirds of these Tex-Mex Oven Fries.
That’s always a good sign.
Eric and I couldn’t decide which dipping sauce we liked better between the Chipotle Lime Ranch Dipping Sauce and the Avocado Ranch Dipping Sauce.
I think the two dipping sauces are a great match for each other, one spicy and the other creamy and cool.
Madeline says she liked the Chipotle Lime Ranch Dipping Sauce best because it was peach, kind of like her favorite color pink.

Tex-Mex Oven Fries
In these Tex-Mex Oven Fries, sliced russet and sweet potatoes are tossed with melted coconut oil, sprinkled with salt and chipotle powder and baked, then tossed with a cilantro lime garlic mixture as soon as they come out of the oven. They're served alongside a duo of dipping sauces: Chipotle Lime Ranch Dipping Sauce and Avocado Ranch Dipping Sauce.
Ingredients
For the Tex-Mex Oven Fries
- 1 lb orange fleshed sweet potatoes
- 1 lb russet baking potatoes
- 2 1/2 tablespoons melted, but cool, coconut oil
- 1/4 - 1/2 teaspoon coarse sea salt
- 1/4 - 1 teaspoon chipotle powder or chili powder
- 2 tablespoons fresh cilantro leaves, finely chopped
- zest of 1 lime
- 1 clove garlic, minced
Instructions
- Preheat the oven to 400 degrees F.
- Rinse and dry the potatoes.
- Cut potatoes lengthwise, without peeling them, into slices 1/2 inch thick.
- Then, cut each slice into batons about 1/4 inch wide and 3-4 inches long.
- Place the potatoes in a large zip top bag.
- Pour the melted, but cool coconut oil into the bag (if it is hot it will melt the plastic), zip the bag, and shake to coat.
- Arrange in a single layer on a large rimmed baking sheet (I lined mine with a parchment paper so they wouldn't stick) and sprinkle with 1/4 - 1/2 teaspoon salt.
- Sprinkle lightly with chipotle powder or chili powder - the amount is up to you according to your heat preferences. I used about 1/4 teaspoon chipotle powder.
- Roast, stirring with a spatula midway through baking time, until tender and browned on the edges, about 20-30 minutes.
- In a bowl, mix cilantro, lime zest, and garlic.
- Sprinkle over warm oven fries and mix gently to coat.
- Season to taste with additional salt, if desired, and serve immediately.
- Serve with Chipotle Lime Ranch Dipping Sauce and Avocado Ranch Dipping Sauce.

Chipotle Lime Ranch Dipping Sauce
This Chipotle Lime Ranch Dipping Sauce goes perfect with a batch of homemade oven fries. Our favorite recipe to serve them with is Tex-Mex Oven Fries which features a mix of sweet potatoes and russet potatoes tossed in a delicious garlicky cilantro mixture.
Ingredients
- 3/4 cup Marzetti Simply Dressed® Ranch Salad Dressing
- zest of 1 large lime
- 1 Chipotle Pepper from Canned Chipotle Peppers in Adobo Sauce
Instructions
- Combine the ranch dressing, zest of 1 lime and 1 chipotle pepper from the can in a small food processor.
- Puree until smooth.
- Taste for heat intensity.
- If you would like a hotter dipping sauce, add additional pepper(s).
- Serve in a bowl alongside the fries.
