Half and Half Recipes
The name ‘half and half’ clues you into its ingredients list — it’s a mixture of equal parts whole milk and light cream, i.e. half whole milk and half light cream.
And if you’ve never noticed “light cream” at the grocery store before, it contains 20% milkfat while more popular heavy cream contains at least 36% milkfat.
Since half and half is made of equal parts milk and light cream, it should come as no surprise that it’s richer than regular milk but lighter and less creamy than cream. The U.S. Department of Agriculture states that half and half must contain between 10.5% to 18% milkfat (so it’s still fairly rich!).
Half and half is often used as a coffee creamer, but there are so many more uses for it.
