In the couple of years, I have really enjoyed experimenting with making my own cocktails at home. It makes holiday gatherings feel more festive and at home happy hours feel just a little more special.
Simple syrups are essential in many cocktail recipes, and infusing them with herbs or fruits is a great way to creatively adapt standard cocktail recipes.
Rosemary Simple Syrup is so easy to make and is a great way to add a unique herbal flavor to a variety of cocktail recipes – plus, there are other ways to use simple syrups, too. Just read on for all the details!
What Does Rosemary Syrup Taste Like?
Fresh rosemary has a characteristic herbal, earthy, piney aroma and flavor that comes through in the syrup.
Because the base of the syrup is 50% sugar, the liquid is deliberately quite sweet because you’ll only use a small amount to enhance other recipes. When a herb such as rosemary is added to a simple syrup it lends a pronounced herbal flavor.

You’ll only need a few basic kitchen tools to prepare this recipe. Here’s what I recommend having on hand before getting started:
- Measuring Cup – to measure the water and the sugar.
- Small Saucepan – to cook the simple syrup in.
- Fine Mesh Strainer – to strain the cooked rosemary after preparing the syrup.

How to Make Rosemary Simple Syryp
Aromatic rosemary is infused into classic simple syrup for a simple way to add fresh herb flavor to a variety of beverages.
- Combine the water and sugar in a saucepan.
- Add the fresh rosemary and bring to a gentle simmer.
- Remove the pan from the heat; then let the rosemary steep as the sugar water cools.
- Discard the rosemary and strain to remove any additional rosemary pieces.

Recipe Tips
- No need to remove the rosemary needles from their stem. Just place the entire sprig, stem and all, in the syrup mixture to cook.
- The intensity of the flavor in this rosemary cocktail syrup is down to the amount of time the rosemary is steeped in the simple syrup. Leave it for 10 minutes for a subtler rosemary flavor or increase the steeping time up to an hour to produce a more robustly flavored syrup.
- For best, results make sure the sugar dissolves completely.
- I don’t recommend leaving the rosemary in the simple syrup for longer than an hour as it can lead to unwanted bitterness in your rosemary syrup.
Ways to Use Rosemary Infused Syrup
The most common use for homemade rosemary syrup is as a liquid sweetener for a variety of beverages, but there are plenty of other ways you can experiment with it.. Here are some of my favorite uses:
- Sweeten a mug of hot tea: rosemary infused syrup would be delicious added to a mug of a variety of herbal based teas.
- Iced tea: too hot for a mug of tea? You can use this rosemary syrup in iced tea, too.
- Sweeten cocktails recipes: if the flavors pair well together, use rosemary simple syrup instead of plain simple syrup in your cocktails.
- In cakes or cupcakes: Brush the tops of the cupcakes or brushed between cake layers with the syrup to keep them moist.
- Mocktails: for a fun and easy mocktail, try a mixture of club soda and cranberry juice with a hit of rosemary syrup.

Can I use a different sweetener?
Yes! Here are a few suggestions to change things up when making your own rosemary syrup:
- For a richer syrup with caramel flavored undertones that go well with rosemary, you might like to try substituting brown sugar for the granulated sugar
- Want a hint of maple flavor in your cocktails? Substitute half of the granulated sugar for pure maple syrup. For this substitute, it must be pure maple syrup, not pancake syrup.
- For a honey flavored syrup, replace half of the granulated sugar with honey.
How long does rosemary simple syrup last?
This rosemary simple syrup should be stored in an airtight container, such as a mason jar, in the refrigerator for up to 2 weeks.
Can you freeze simple syrup?
Yes! If you want your rosemary cocktail syrup to last longer than 2 weeks, I recommend freezing it. Once you’ve removed the fresh rosemary, let the simple syrup cool completely. Then, transfer the liquid to an ice cube tray and freeze until solid. Remove frozen cubes and place in a freezer safe container or storage bag with a label.
This method is also great if you have a lot of fresh rosemary in your garden and would like to use some of it up in a big batch of this homemade rosemary infused simple syrup!

Ingredients
- 1 cup water
- 1 cup white sugar
- 4 sprigs rosemary
Instructions
- In a saucepan set over a medium heat add the water and sugar.
- Stir the sugar until it dissolves then bring to a low boil.
- Add the rosemary sprigs and simmer over a low heat, without stirring, for 3 minutes.
- Remove the saucepan from the heat and allow to steep for 10 minutes.
- Remove and discard the rosemary sprigs.
- Strain the rosemary syrup into a bottle or jar with an airtight lid.
