Strawberry Bruschetta (Easy Summer Appetizer!)

Making this Strawberry Bruschetta
Summertime entertaining seems to be a more “go with the flow” kind of entertaining at our place.
Like 2 nights ago when we texted our friends (we’d been hanging around our kids for too long … lots of texting with 3 teens around) and asked if they wanted to come in to town for dinner. It was very last minute.
A late dinner it was. I think we ate around 9, but isn’t that what summer is all about?
Lazy days, long nights, hanging outside with friends eating good food, and trying to stay cool?
Very little thought went into my table setting. Simple tea light candles. And it’s always good when the kids help out.
We cooked in the kitchen together. I put my friend Steph to work with appetizer ingredients.

Strawberry Bruschetta has become our quick and easy appetizer, especially since we grow our own strawberries on the side of our house in a large patch.
I think about hospitality as giving a gift to friends. They love it, it feels good to give out, and it takes your mind off of yourself.

You’ll need a few kitchen tools to prepare this recipe for strawberry balsamic bruschetta. Here’s what I recommend having on hand before getting started:
- Colander or Strainer – to wash the fresh strawberries and basil.
- Cutting Board and Knife – to slice the strawberries and chop the basil.
- Baking Sheets – to roast the strawberries and broil the bread slices.
- Spoon or Butter Knife – to spread the goat cheese on the toasted bread.
- Spoon – to add the strawberry mixture on top of the goat cheese.

How to Make Strawberry Bruschetta
This simple recipe for bruschetta requires barely any prep time! Here’s how you make it:
- Preheat the oven.
- Combine strawberries and balsamic vinegar in a medium bowl.
- Transfer the strawberries and balsamic to a baking sheet and bake for 5 minutes.
- After baking, cool at room temperature while preparing the bread slices.
- Slice the ciabatta or baguette, brush with olive oil, transfer to a baking sheet and broil until golden brown.
- Spread the tangy goat cheese on the toasted bread. Then spoon strawberry mixture on top. Season, to taste with salt and pepper and sprinkle with finely chopped fresh basil.

Tips for Making the Best Strawberry Bruschetta
Fresh Strawberries – Look for strawberries with a bright, beautiful red color. Firm red strawberries that are glossy on the outside are best!
Goat Cheese – goat cheese is not aged; it should be slightly firm but also moist and creamy. I love using honey goat cheese in this recipe. The honey flavor tastes amazing with the strawberries and balsamic.
Balsamic Vinegar – make sure your balsamic lists the first ingredient as ‘grape must’ and does not have any additional and unnecessary ingredients added (such as caramel coloring). Another characteristic of a quality vinegar is that it has been aged for at least 12 years, making it thick and somewhat sweet.
Artisan Bread – Purchase a nice artisan bread that is crusty enough on the outside to hold up the weight of the goat cheese, strawberries, and balsamic glaze.

What Can I Substitute for Goat Cheese for this Recipe?
Any other soft cheese that you think tastes good with the flavor of strawberries and balsamic vinegar. I recommend ricotta cheese or cream cheese.
Is There a Good Substitute for Ciabatta?
If you can’t find ciabatta bread, any other artisan bread that you can slice in pieces that are about 2-3 inches wide and 3-4 inches long would work.
Something like a French bread baguette should do the trick.
What Can I Substitute for Basil in this Strawberry Bruschetta?
I think basil is the best choice of the fresh herbs to pair with the sweetness of the strawberries and the tanginess of the balsamic vinegar.
However, fresh mint would work in a pinch if you don’t have any basil on hand or if your grocery store is out of it.

One of my favorite things about these balsamic strawberries is that you can use them in a variety of ways in addition to making bruschetta!
- Try serving the strawberries over a bed of spinach for a simple spinach salad.
- Serve the strawberry mixture with pound cake or shortcakes and whipped cream.
- For an easy dessert idea, add sweet strawberries to a bowl of vanilla ice cream.
- For a healthy dessert, try spooning the balsamic strawberries over a bowl of Greek yogurt.

Strawberry bruschetta might be new to you, but I guarantee it will quickly become your favorite appetizer to make for guests.
Ingredients
For the Balsamic Roasted Strawberries
- 1 tablespoon Maple Syrup or Honey
- 3 tablespoons Balsamic Vinegar
- 2 1/2 cups sliced Fresh Strawberries
For the Bread Slices
- 1 loaf Ciabatta or Artisan Baguette
- 1-2 tablespoon Extra-Virgin Olive Oil
Remaining Ingredients
- 1 cup Soft Goat Cheese
- 1/2 cup chopped Fresh Basil
- Sea Salt, to taste
- Fresh Cracked Black Pepper, to taste
Instructions
Making the Balsamic Roasted Strawberries
- Preheat the oven to 375°F.
- In a medium mixing bowl, combine the maple syrup (or honey) and the balsamic vinegar. Stir to combine, set aside.
- Slice the strawberries and add them to the bowl with the balsamic vinegar, gently mixing until coated.
- Spread strawberries out on a baking sheet and roast for 20-30 minutes.
- Remove and let sit at room temperature while you prepare the bread.
Toasting the Bread
- Cut the ciabatta into 1/2 inch thick slices, brush both sides with olive oil using a silicone pastry brush.
- Place the bread slices on a clean baking sheet. Broil on low for 1 - 3 minutes on each side, until they are golden brown and toasted.
Assembling the Strawberry Bruschetta
- Spread goat cheese on the toasted bread slices, then top spread goat cheese on top of each slice.
- Spoon the balsamic roasted strawberries over top of the goat cheese.
- Season to taste with salt and pepper, if desired.
- Garnish with fresh basil
