It is officially way too hot in New Mexico. Absolute torture to come home from vacation (Visiting Crete and Athens in a day) and be transported from Spring to Summer. There was no easing into the hot. Combine said hot weather with the reality of being home from vacation and there’s really not a whole lot of motivation to cook anything for dinner.
During the summer we tend to eat a lot of dinners that are appetizer or snack like. Healthy dips, lots of vegetables and fruits, and whole grains to fill up. These kind of meals are perfect for when it is too hot to turn on the oven.
Red Pepper Hummus for a Healthy Snack
I made this recipe for Roasted Red Pepper Hummus on a particularly hot day. We don’t do a lot of dips, but when we do I try to make dip recipes that add nutritional value to the meal or snack rather than being empty calories. Hummus is great as a dip because it is made largely from chickpeas (or garbanzo beans).
Beans are filling and packed with protein and fiber which makes hummus a great addition to many no-cook summer meals and snacks. I love recipes like this because they’re so versatile. Hummus can be served so many ways. From a simple appetizer or starter to a meal with cut vegetables to part of a larger meal.
What is Hummus?
Hummus is a Middle Eastern dip that resembles a thick paste or spread. The classic hummus recipe is traditionally made from chickpeas, sesame seeds (or tahini), olive oil, lemon, and garlic.
This recipe has the addition of roasted red bell peppers and some ground cumin that adds a smoky flavor to the dip. Don’t be afraid to get creative with hummus. You can experiment with different beans, spices, or other vegetables to add in.

What Is Tahini
Tahini is made by grinding sesame seeds with oil until a smooth paste forms.
It is usually found near the nut butters in the grocery store, though sometimes you might find it located near the international foods if your grocery store has a section for that. If you can’t find tahini in your grocery store, you can purchase tahini online.
If you don’t have tahini or have a sesame allergy, you can substitute nut butters instead. I recommend sunflower butter, almond butter, or cashew butter as substitutes.
How to Make Hummus with Roasted Red Peppers
This recipe for hummus with roasted red peppers is actually a really easy recipe to prepare! Here’s an over view of the instructions:
Place the chickpeas, garlic cloves, roasted red bell pepper, olive oil, tahini, lemon juice, ground cumin, black pepper, and salt in the bowl of a food processor.
Pulse a few times to combine the ingredients. Then, using a spatula scrape down the sides of the food processor’s interior.
After that, process until the mixture is smooth, scraping the sides periodically if needed. That’s it!

You’ll need to store any leftover hummus in an airtight container in the refrigerator. Homemade hummus with last for about 3 – 4 days in the refrigerator.
If the hummus begins to mold, has developed a sour smell, is older than 4 days, or hasn’t been refrigerated properly then it is time to toss it out.
How to Freeze Hummus with Roasted Red Pepper
Hummus is easy to freeze and doesn’t require any special preparation. Just transfer it to a freezer-safe sealed container, then label and date it.
Make sure you leave some room at the top to account for expansion as the hummus freezes. It will last for about 4 months in the freezer.

Roasted Red Bell Pepper Hummus
This recipe for Roasted Red Pepper Hummus is so easy to prepare. It features roasted red bell peppers with chickpeas, tahini, lemon, garlic, and cumin. Homemade hummus is a delicious and healthy snack that you can serve in a variety of different ways.
Ingredients
- 1 - 15 ounce can chickpeas, drained and rinsed (I like Bush's brand)
- 2 cloves garlic
- 1/3 - 1/2 cup chopped roasted red bell pepper
- 2 1/2 tablespoons olive oil
- 2 tablespoons Tahini
- juice of half of a lemon
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 1/8 teaspoon cumin
Instructions
- Open the can of chickpeas and drain the chickpeas over the sink using a a strainer or colander. Then, rinse the chickpeas with cold water.
- Add the chickpeas, garlic, roasted red pepper, olive oil, tahini, lemon juice, salt, black pepper, and cumin to the bowl of a food processor or a high-speed blender.
- Place the lid on the food processor or blender. Then, pulse the mixture a few times.
- Scrape the sides down using a spatula, then replace the lid and blend the mixture, scraping the sides down periodically as needed, until the hummus is smooth.
- If needed, add a tablespoon or two of water and continue to blend.
- Add additional salt and pepper to taste if needed.

It should work either way, just make sure to drain store bought roasted peppers. I like to roast my own when the red peppers are on sale.

Tracy–I used to use tahini, but made hummus once without it because I was out and we didn’t miss it at all! It may not be authentic without it, but we add flavor with roasted garlic, cumin, garlic, cilantro, or whatever else strikes our fancy and our hummus is always a bit hit. Try it!
