Roasted Peach Crostini with Brown Sugar and Ginger
Each week I buy around a dozen of them and I’m usually never left with any to play with in the kitchen. Every batch has been just as tasty and juicy as I can imagine and we can’t help but gobble them up just as nature intended. And most often we were too busy playing at the pool to be bothered with baking.
I finally wised up, you know, now that summer is just about over. I bought a few extra than we really needed. I am determined to get at least a few peach desserts on the table after dinner before this perfect fruit is gone for the year. I’ve had some goat cheese in the fridge and I knew just what I wanted to try: Roasted Peach and Goat Cheese Crostini.
I love to roast fruit. Roasting might traditionally sound like something for meat or vegetables, but it produces amazingly sweet and tender flavors in fruit as well. Go ahead, give it a try! If it’s too hot to turn on the oven, you can also roast peaches in the toaster oven.
You can enjoy this Roasted Peach Crostini recipe as a simple fruit dessert after dinner or serve it as an appetizer or snack. It is perfect for either occasion.
I might be guilty serving these roasted brown sugar ginger peaches over a bowl of yogurt and granola. Roasted Peaches might also be pretty near perfect when served over a simple bowl of homemade ice cream.

Roasted Peach Crostini
I love roasting fruit, and pairing peaches with goat cheese seemed like the perfect party appetizer.
Ingredients
- 3 large peaches, pitted and cut into slices
- 1 1/2 tablespoon butter, melted
- 3 tablespoons brown sugar
- 1 teaspoon vanilla
- pinch of salt
- pinch of cinnamon
- 2 drops pure ginger essential oil or 1 teaspoon fresh minced ginger
- Baguette, sliced
Instructions
- Preheat oven to 425 degrees F.
- Combine the butter, sugar, vanilla, salt, cinnamon and ginger. Toss with the peaches until coated.
- Pour the mixture into an oven-safe cast iron skillet (I like my Le Creuset Enameled Cast-Iron Skillet). Roast at 425 degrees F for 15 minutes.
- Meanwhile, toast the sliced baguette. Spread each generously with goat cheese. Top with roasted peaches and a drizzle of the juices from the pan. Eat and enjoy!

My absolute favorite way to eat goat cheese is to crumble herb goat cheese on a spinach salad with grilled chicken, raspberries and a raspberry vinaigrette! Ohhhh mama!

Ever since visiting Paris many years ago, my absolute favorite thing to do with goat cheese is to create little baked goat cheese disks (?) and put them on top of a salad with a light dressing. YUM!
