Raspberry Almond Angel Food Cake Parfaits
Mother’s Day is just around the corner! I am so glad, too. Mother’s Day in Colorado typically makes the “safe zone” for planting. Summer will be on its way in and no more worry of spring snow storms (it just snowed last weekend here!).
Since we moved in to our new house in late fall, our front and back yards have been nothing but dirt. This week the builder is putting in the front yard, and really soon here Kevin and I will start working on the backyard.
This feels like such a gift to finally have a yard with grass and plants after the months of dirt (which inevitably gets tracked in the house by kids and dog).
What does that have to do with Mother’s Day? Nothing really other than just to say that I really like this time of year that we are heading towards.
I love planting flowers and seeing everything come alive again. I love spending time outside in the sun. And I love all of the fresh, and brightly colored and flavored foods, like these Raspberry Almond Angel Food Cake Parfaits, that are perfect during the spring and summer months.

So, this year I wanted to focus on something simpler for my Mother’s Day recipe. I still wanted to share something tasty and fresh for the upcoming warm weather, but easy enough for kids to put together either completely unsupervised or with a little supervision from Dad or another family member or friend, depending on your kids’ skill levels.
Also important, because most moms don’t like big messes in the kitchen: that the recipe be prepared without making a disaster of the kitchen.
I think these Raspberry Almond Angel Food Cake Parfaits fit the bill on those requirements. Already prepared Angel Food Cake is cut into 1 inch cubes. Kids can even tear the cake into pieces if they aren’t ready to use a knife.
I layered the cake in stemless wine glasses (jars or clear bowls work well, too) with lemon curd, fresh raspberries, honey almond whipped cream, and Fisher Nuts Sliced Almonds.

The honey almond whipped cream is the most challenging part of this Mother’s Day dessert recipe, but don’t skip it because it is so good, especially with the crunch of sliced almonds. That said, kids can usually handle a stand mixer or a hand mixer for a couple of minutes with some adult supervision – and if your kids are anything like mine, they usually LOVE using the mixer.

Raspberry Almond Angel Food Cake Parfaits
Raspberry Almond Angel Food Cake Parfaits is a super easy dessert recipe that kids can make for Mom on Mother's Day. Angel Food Cake pieces are layered with lemon curd, fresh raspberries, honey almond whipped cream and sliced almonds.
Ingredients
Honey Almond Whipped Cream
- 1 cup Heavy Whipping Cream
- 1 1/2 tablespoons Honey
- 1/2 teaspoon Almond Extract
For the Parfaits
- 1 - 13 ounce Angel Food Cake, cut into 1 inch pieces
- 3/4 cup Lemon Curd
- 12 ounces Fresh Raspberries
- 1 batch Honey Almond Whipped Cream, ingredients follow
- 3/4 cup Fisher Nuts Sliced Almonds
Instructions
- In the bowl of a stand mixer, add the heavy whipping cream, honey, and almond extract. Beat until medium peaks form. Set aside.
- Layer the ingredients, dividing half of the ingredients between 6 clear glass serving containers (such as stemless wine glasses, clear bowls, or small mason jars): angel food cake, lemon curd, raspberries, whipped cream, and almonds. Then, using the remaining half of the ingredients, repeat to form additional layers.
- Serve immediately.
