Creating this Recipe for Chipotle Chicken Wraps
I‘ve talked a few times about lunch ideas and lunchbox ideas for kids, but what I really need are ideas for my own lunch. I’m busy in the kitchen already with recipe testing, writing, or photographing things for the blog. I don’t usually want to stop doing that so I can make another recipe.
I do eat during the day, but not like I should. And with both kids at school all day during the school year, I don’t have anyone else to share a meal with – what I like most about cooking and eating is doing it with someone else that I love. Instead, I find myself eating lunch alone more often than with a companion.
I often snack on whatever recipe I am working on for the blog that day even though I know that what I really should be doing taking the time to sit down, take a break, and eat a balanced meal.
Wraps are an old idea revisited. I get bored with eating the same thing every day so I try to mix things up. I haven’t done wraps in a while and sometimes they just feel more exciting than a sandwich.
Easy Chipotle Wrap with Chicken
A little something I whipped up this week was a Queso Fresco and Chipotle Chicken and Veggie Wrap.
A burrito sized spinach wrap spread with The Laughing Cow Light Queso Fresco & Chipotle and topped with various vegetables and some Shredded Tex-Mex Crock-Pot Chicken that I had in the freezer.
Tasty and super simple. Writing this post actually took more time than it did to prepare the recipe.

How to Make this Chipotle Chicken Wrap Recipe
Here’s a quick overview of the instructions to prepare these easy wraps with chicken:
First, you’ll spread the Queso Fresco & Chipotle Laughing Cow Wedges on one side of each spinach tortilla wrap. Then, on top of the cheese, you’ll add some finely chopped fresh cilantro.
Next, in a medium bowl, stir together the shredded chicken and diced chipotle peppers to make the spicy chipotle chicken for the wraps.
Then, add the black beans, bell peppers, corn, tomatoes, and avocado. After that, add that mixture on top of the wraps, dividing it between the two tortillas.
Then, just roll the tortillas up like pinwheels. Lastly, slice into rounds and secure with a toothpick if needed.

What Can I Substitute for Laughing Cow Light Queso Fresco & Chipotle?
If you can’t find this variety of Laughing Cow, try substituting the pepper jack variety or the original variety. For the original, you’ll likely want to increase your chipotle peppers and you may want to add some other seasonings depending on your personal tastes.
If you don’t have Laughing Cow cheeses near you, then try substituting softened cream cheese (about 84 grams worth). Add some extra chipotle peppers and other seasonings, if desired.
How Can I Make these Chipotle Chicken Wraps Gluten-Free?
If you want to make a gluten-free version of this chipotle chicken wrap recipe, simply swap out the spinach tortillas for your favorite gluten-free tortillas (as long as you can easily roll them without cracking).
Or, you can use a large lettuce leaf in place of the tortilla and make chipotle chicken lettuce wraps. Because even the large lettuce leaves are a lot smaller than burrito sized tortilla wraps, you’ll like need more than just two. 4 – 6 should do it.
You may have a harder time spreading the cheese on the lettuce leaves. In that case, you can mix the cheese with the chicken and chipotle peppers.
Can I Make these Chipotle Wraps without Chicken?
Yes! You can substitute shredded pork taco meat, ground taco meat (I like to season ground beef with this Spicy Taco Seasoning), or just use extra black beans in place of the chicken.

Queso Fresco & Chipotle Chicken and Veggie Wraps

Ingredients
For the Chipotle Chicken Wraps
- 2 Spinach Tortilla Wraps (burrito size)
- 4 wedges The Laughing Cow Light Queso Fresco & Chipotle
- 1 tablespoon Finely chopped cilantro
- 1/2 tablespoon minced Chipotle in Adobo
- 1/4 cup Shredded Mexican Chicken
- 1/4 cup Black Beans
- 1/4 cup diced Avocado
- 1/4 cup Corn Kernels
- 1/4 cup diced Red Bell Pepper
- 1/4 cup diced Tomatoes
Condiment Options to Serve with these Chicken Wraps
- Hot Sauce
- Sour Cream
- Chipotle Sauce
- Restaurant Style Salsa
- Salsa Verde
Instructions
- On one side of each tortilla wrap, spread 2 wedges of the The Laughing Cow Light Queso Fresco & Chipotle cheese.
- Then, sprinkle the cheese with the cilantro, dividing it between the 2 wraps.
- In a medium bowl, combine the chicken with the chipotle peppers. Stir to mix well. Season to taste with salt and pepper, if desired.
- Then, add the black beans, avocado, corn, bell pepper, and tomatoes and stir to combine.
- Spread the chicken mixture on top of each tortilla, dividing it evenly between the two wraps, leaving about a 1/2 inch border from the edges.
- After adding all of the toppings, tightly roll the tortilla. Start at one end and roll it up like a pinwheel.
- Slice each wrap into 2 - 3 inch sections. Hold each section together with toothpicks if needed.
- Serve with salsa, hot sauce, chipotle sauce, sour cream, or guacamole.
