Tools Needed for This Recipe
Since this is a sorbet recipe, you’ll need a few special pieces of kitchen equipment to prepare and store it.
- Traditional Ice Cream Maker or Ninja CREAMi Ice Cream Maker — I’ve tested this recipe in both, and they work great. Using an ice cream maker is the easiest way to prepare this recipe, but I’ve also included instructions for preparing it if you don’t have this special equipment in your kitchen.
- Saucepan — You’ll need a saucepan for preparing the sorbet base.
- Measuring Cups — For accurate measuring of ingredients.
- Ice Cream Freezer Containers — I use these reusable containers for freezing ice cream, soups, and more. They’re incredibly durable!
- Ice Cream Scoop — Investing in a good-quality ice cream scoop makes all the difference. This is the one we use and love.
Ingredient Notes
This recipe for pomegranate sorbet only takes 4 simple ingredients to prepare! Don’t forget to check out the free printable recipe card with the exact measurements and detailed instructions. It’s located at the bottom of the post.
Here’s what you’ll need:
- Pomegranate Juice — Use bottled or fresh, so long as it’s pure pomegranate juice (i.e. no sugar added).
- Water — Straight from the tap is fine.
- Granulated Sugar — This recipe uses just enough sugar to tame the tartness from the pomegranate juice without making the sorbet too sweet.
- Honey — Adds sweetness as well as a subtle floral flavor. Replace with extra sugar or pure maple syrup to keep vegan.
Flavor Variations
- Lemon Pomegranate Sorbet — Swap the sugar with lemon sugar.
- Raspberry Pomegranate Sorbet — Replace part of the juice with pomegranate raspberry juice, cran-raspberry juice, or plain raspberry juice.
- Blueberry Pomegranate Sorbet — Replace part of the juice with pomegranate blueberry juice, cran-blueberry juice, or plain blueberry juice.
How to Make Pomegranate Sorbet
- Simmer for 5 minutes. When preparing the sorbet base, make sure the sugar dissolves completely while you are cooking it. If any sugar crystals remain, you could have some gritty bits in your final product.
- Cool to room temperature, then refrigerate. The sorbet base should be chilled until completely cold before churning. You’ll get better results when churning a cold base. Churning while warm will result in thin sorbet that melts quickly if you intend to serve it immediately.
- Churn using an ice cream maker. Store the insert to your ice cream maker (if it has one) in the freezer. You’ll want it to be completely frozen solid when you start churning the sorbet.
- Freeze. Sorbets need to freeze for at least an hour before being scooped and served.
Katie’s Tip: No ice cream machine? No problem! I’ve provided instructions in the recipe card below for making this recipe without an ice cream machine.
Make-Ahead Instructions
You can prepare the sorbet base and chill it in the fridge for up to 2 days before you plan to churn it.
Once churned, homemade sorbet will last for 1 month. (It won’t go bad, but since it’s made without preservatives or sugar syrups the sorbet will develop freezer burn over time.)
Serving Suggestions
I love the sorbet’s bright color and don’t think it needs anything else, but you can garnish it for a fancy presentation if you like. Try one of the following:
- Fresh Mint Leaves
- Fresh Pomegranate Seeds (Pomegranate Arils)
- Dark Chocolate Curls
Katie’s Tip: Another fun way to serve this is as a cocktail! Add a small scoop to a cocktail glass and pour a few sips of champagne, rosé, or sparkling white wine over top.
Storage Instructions
The sorbet is best stored in an airtight container with a piece of plastic wrap pressed directly onto the surface. Covering the sorbet surface, and then placing the lid for the container on top, helps prevent the formation of ice crystals.
This sorbet will stay fresh for up to 4 weeks when stored properly in the freezer.

Pomegranate Sorbet Recipe
This homemade pomegranate sorbet is bright, tangy, and made with just 4 simple ingredients. Naturally dairy-free, it’s a refreshing frozen treat perfect for summer or holiday desserts.

For the Sorbet Base
- 2 cups 100% Pomegranate Juice
- 1/2 cup Water
- 1/2 cup Sugar
- 1 tablespoon Honey
Optional Garnish Ideas
- Fresh Mint Leaves
- Fresh Pomegranate Arils
- Chocolate Curls
Instructions
With an Ice Cream Maker (Suggested)
- Make the base: Combine the pomegranate juice water, sugar, and honey in a saucepan.
- Cook over medium heat until simmering. Let simmer 5 minutes, or until the sugar is completely dissolved.
- Chill: Transfer the pomegranate sorbet base to the refrigerator and cool until completely chilled, about 2 - 3 hours.
- Churn: Once the sorbet base has completely chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions for about 30 minutes.
- Freeze: Then, transfer to a sealed freezer-safe bowl and freeze for 1 - 2 hours before serving.
Without an Ice Cream Maker
- To prepare this recipe without using an ice cream maker, chill the pomegranate sorbet base in the refrigerator until cold.
- Transfer it to a freezer-safe bowl, such as a stainless-steel bowl. Place the bowl on a level surface in the freezer.
- Stir the sorbet every 30 minutes until the mixture is completely frozen, about 4-6 hours.

After churning, homemade sorbet keeps well for about a month. It won’t spoil, but since it’s made without stabilizers or corn syrup, the texture may start to get icy over time.
