What Is a Lillet Spritz?
The Lillet spritz is a bubbly cocktail made with Lillet Blanc (a fortified French wine) and club soda. My take on this spritzer also includes orange bitters and orange blossom water.
Lillet Blanc is sweet, with a subtle acidity to it. It has distinct undertones of orange and honey that pair perfectly with the orange bitters and orange blossom water.
The Lillet Spritz draws inspiration from the classic Spritz family of cocktails, which were first created in the 1800s by Austro-Hungarian soldiers who were stationed in northern Italy. The local wine was far too strong for them, so they added a “spritz” (i.e. splash) of water to dilute it.
Spritz cocktails are generally served as an aperitif. They’re to be enjoyed with light nibbles before a meal to stimulate the appetite.
However, we also love making Lillet spritzers on pool days; the fizzy cocktail is so refreshing on hot days!

What Is Club Soda?
Club soda is heavily carbonated water that’s made by injecting it with carbon dioxide. If you’re out of club soda, you can replace it with sparkling water; just keep in mind that the spritzer will be less bubbly.

- Use the real thing. There’s really no substitute for the Lillet Blanc in this recipe since it’s the star ingredient! Buy the real thing and keep a bottle in your fridge; it’s perfect for building all kinds of summer cocktails.
- Chill the ingredients. Even though this drink is served over ice, it’s best to chill the Lillet Blanc and club soda before preparing the cocktails to keep them colder for longer.
- Chill the glasses. If you have time, I also suggest chilling the glasses for about 5 minutes in the freezer before building the spritzers. Again, you want the cocktails to be as cold as possible!
- Use cubed ice, not crushed. If your ice machine has the option to create different types of ice, opt for ice cubes rather than crushed ice. Ice cubes take longer to melt, which helps to prevent your spritzers from being watered down.
- Enjoy immediately! This isn’t a cocktail you want to prepare in advance. The club soda loses carbonation fairly quickly so it’s best to assemble the Lillet Blanc spritzers and serve them right away.

- Serve ice in an ice bucket alongside the pitcher and add ice directly to the glasses as the cocktail is served. (You don’t want to pitcher cocktail to get watered down!)
