Instant Pot French Dip Sliders
Beef chuck roast is pressure cooked until fork tender, then loaded onto sweet Hawaiian rolls and topped with caramelized onions and Provolone cheese. The Instant Pot French Dip Sliders are finished in the oven and served piping hot. Perfect for holiday entertaining and game days!
About This Recipe
French dip sliders are made by piling tender shaved beef on Hawaiian rolls slathered with creamy Boursin cheese. Caramelized onions are spooned over the beef, followed by Provolone cheese.
A savory melted butter mixture is poured over the sliders before they’re baked to golden brown perfection.
Instead of slow cooking the beef for these sliders, I dramatically shortened the cook time by using my Instant Pot. After being pressure cooked, the beef chuck roast falls apart effortlessly.
The red wine-infused cooking liquid left in the bottom of the Instant Pot is used to make the lip-smacking au jus that classic French dip sandwiches are known for.
Making Hawaiian roll French dip sliders requires a little more TLC than your average slider sandwiches — Instant Pot or not — but this show stopping appetizer is guaranteed to wow at your next holiday party or game day!
Tools You’ll Need
Since this is an Instant Pot recipe, you’ll need a few specific pieces of equipment:
- Instant Pot — I used my 8-quart Instant Pot to make this recipe.
- Measuring Spoons — For measuring the spices.
- Liquid Measuring Cup — For measuring the beef broth and red wine.
- Large Skillet — For caramelizing the onions.
- Cutting Board and Chef’s Knife — For slicing the onions.
- Fat Separator — Technically you can prepare the au jus without one, but it dramatically shortens the prep time.
- Large Cookie Sheet — For baking the sliders.

This recipe has quite a few ingredients, but that’s because you’ll be pressure cooking the shredded beef, assembling the sliders, and pouring a melted butter mixture over top.

How to Make Instant Pot French Dip Sliders
This recipe has quite a few steps, but I promise it’s very easy to prepare! Here’s an overview of how the Hawaiian roll sliders are made:
- Pressure cook the beef: You’ll want to trim any excess fat off the beef chuck roast before searing it in the Instant Pot on the “Saute” setting. Saute the onions and garlic before adding in the seasonings, beef broth, red wine, and pressure cooking on high for 75 minutes.
- Shred the beef: Do a natural pressure release, remove the beef from the Instant Pot, and shred. It should be tender enough to shred easily with two forks.
- Prepare the au jus: I prefer using a fat separator to create the au jus from the liquid left in the bottom of the Instant Pot.
- Assemble the sliders: Cut the Hawaiian rolls in half to create a top bun and bottom bun. Spread the bottom layer with Boursin cheese. Top with shredded beef, caramelized onions, and Provolone. Place the top buns over the sliders.
- Bake: Pour the melted butter mixture over the top of the sliders. Bake until golden brown. Serve with au jus for dipping.

Tips for Making This Recipe
- Nearly every element of this recipe can be prepared days in advance! See the instructions in the section above for more details.
- Trim any excess fat off the chuck roast. You don’t want too much fat to drip down into the cooking liquid, or else it’ll take you so much longer to prepare the au jus.
- Use a fat separator. Speaking of, I highly suggest investing in a fat separator if you love making French dip recipes. It makes skimming off the fat SO much faster and easier.
- Use King’s Hawaiian Rolls. Don’t use regular slider buns to make the French dip sliders. The flavors of juicy shredded beef, savory caramelized onions, melted Provolone go so much better with soft and sweet Hawaiian rolls!

Can the red wine be omitted or substituted?
I adore cooking with red wine, but if you don’t want to use it for whatever reason, you may substitute it with an equal amount of beef broth.
The au jus won’t be quite as flavorful, but it will still be delicious!
Can the Boursin cheese be omitted or substituted?
Can’t find any Boursin cheese? Use a small amount of garlic herb cream cheese instead.
Can au jus be made without a fat separator?
Of course! If you don’t have a fat separator, you can let the fat rise to the top of the Instant Pot insert and remove the excess grease by spooning it out by hand.
(This is easier to do if you cook the beef the night before and refrigerate the cooking liquid separately. The fat hardens on top and can be skimmed off in seconds.)
I went years doing it this way until I finally caved and bought a fat separator.
Can the sliders be made without an Instant Pot?

Storage Instructions
Once you’ve assembled the French dip sliders on the Hawaiian rolls, you really need to bake and eat them ASAP.
Leftovers will last up to 3 days in the fridge, but the rolls soften over time. They’re still tasty, but I wouldn’t serve them to guests.
What to Serve with French Dip Sliders
Obviously, you have to serve the shredded beef French dip sliders with au jus. That’s what puts the “dip” in French dip!
As far as sides and appetizers go, round out your holiday or game day menu by making some of the following:

Instant Pot French Dip Sliders

Ingredients
French Dip Meat
- 3 pounds beef chuck roast, trim extra fat off
- kosher salt
- black pepper
- 1 tablespoon olive oil
- 2 medium yellow onions, diced
- 8 cloves garlic, minced
- 2 bay leaves
- 4 tablespoons Worcestershire sauce
- ¼ cup dry red wine
- 2 tablespoons tomato paste
- 1 ¾ cups beef broth
- 2 sprigs fresh thyme or ¾ teaspoon dried thyme
For the Slider Filling
- 2 -12 ounce packages King's Hawaiian slider rolls
- 1 - 5.3 oz package garlic herb Boursin cheese, softened to room temp
- 3 large yellow onions, caramelized
- 6 ounces provolone cheese
Butter Sauce
- ¾ cup melted butter
- ½ teaspoon season salt (such as Lawry’s)
- 1 tablespoon Dijon mustard
- 1 ½ teaspoons Worcestershire sauce
- 1 tablespoons poppy seeds
- 2 teaspoons dried minced onion
Instructions
Make the French Dip Beef:
- Cut any excessive fat off of the roast and discard it. Pat the roast dry on both sides with a clean, dry paper towel. Season both sides of the roast generously with salt and pepper.
- Heat the oil in the insert of your instant pot set on sauté. Add the roast and sear until well browned on each side (about 5 - 6 minutes per side). Remove the seared roast and set aside on a clean plate.
- Add the onions and saute for 3-5 minutes, or until tender and translucent. Then add the garlic and saute for 1 minute.
- Add the meat and any juices that have collected on the plate along to the instant pot. Add the bay leaves, Worcestershire, red wine, tomato paste, beef broth, and fresh thyme.
- Secure the lid, making sure the release valve is set to close. Set the controls to high pressure and cook for 75 minutes.
- After the cook time has elapsed, let the pressure release naturally for 15 - 20 minutes. After that, quick release any remaining pressure.
- Remove the meat and shred it. Set aside in a bowl.
Make the Au Jus:
- Strain the liquid that remains in the instant pot into a fat separator. Discard the onion, bay leaves and herb stem debris.
- Using the fat separator, pour the au jus back into the instant pot and set on the “warm setting,” so it stays warm while you prepare the sandwiches.
Assemble the Sliders:
- Preheat the oven to 350 degrees. Place the oven rack on the lower center position.
- Cut the rolls in half. Place the bottoms on a large cookie sheet or baking pan.
- Divide the boursin cheese between the two packages, spreading on the bottom layer of rolls. Then, top with the shredded beef, caramelized onions, and provolone cheese.
- Place the tops of the rolls over the cheese. Set aside.
Make the Butter Sauce:
- In a glass measuring cup, combine the melted butter, season salt, dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Whisk until well combined.
- Pour the butter mixture over top of the sandwiches. Then, bake the sandwiches on the lower center rack in a 350 degrees F preheated oven for 15 - 20 minutes, or until the rolls are golden on the top and the cheese is melted.
Serving the Sliders:
- Cut rolls through the layers into individual sandwiches and serve alongside a bowl of au jus for dipping.
