Tools You’ll Need
You’ll need a few kitchen tools to prepare this recipe. Here’s what I recommend having on hand before getting started:
- Instant Pot — I always make turmeric rice in my Instant Pot for ease.
- Citrus Juicer — Helps get every last drop of juice from your lemons.
- Microplane — My tool of choice for zesting lemons.
- Garlic Press — For crushing the fresh garlic cloves.
- Serving Bowls — I suggest serving these chicken tzatziki rice bowls in wide, shallow bowls (pasta bowls or similar would be perfect).
Ingredient Notes
You can make these bowls as homemade as you like; either follow the individual recipes linked in the recipe card below, or buy a few items pre-made at the grocery store to save time.
Don’t forget to reference the FREE printable recipe card at the bottom of the post for full measurements and instructions.
- Turmeric Rice — This buttery, fragrant, yellow rice is our favorite base for assembling Greek-style chicken bowls. Cooking the rice in an Instant Pot takes just 10 minutes!
- Greek Chicken — This marinade can be used to flavor chicken breasts or thighs, and the meat can be grilled, roasted, or pan-fried (we prefer grilling the chicken).
- Cucumber Tomato Salsa — Finely chopped tomatoes, cucumber, and red onion are tossed in a lemony dressing that makes for the tastiest topping for these bowls.
- Tzatziki — This Greek yogurt and cucumber dip is ultra creamy, light, and refreshing.
- Hummus — Buy your favorite hummus at the store, or make a batch of red pepper hummus at home.
- Shredded Lettuce — Adds lots of crunch.
- Feta — Buy a block and crumble it with your fingers to make big, salty chunks.
- Fresh Herbs — Dill, parsley, or oregano are the perfect finishing touch.
- Lemon Slices — A squeeze of fresh lemon juice brings everything together.

How to Make Chicken Tzatziki Bowls
-
Make the cucumber tomato salsa. For the best flavor, let the salsa chill for at least 30 minutes before serving.
Make the turmeric rice. My Instant Pot recipe (linked in the recipe card below) is so fast and easy to make. The rice should be done in about 10 minutes!
Cook the chicken. If possible, pop the chicken into the marinade the night before so it has time to tenderize and soak up all that flavor before being roasted, grilled, or pan-fried. The cook time should take around 15 minutes. Slice it into thick strips once done.
Assemble the bowls. This recipe makes about 6 bowls. Scoop the rice into the bottom of your bowl first, then arrange the toppings and chicken in sections for a pretty presentation.
The above is simply a quick summary of this recipe. Check out the full recipe in the free printable recipe card at the bottom of this post for all the detailed instructions.
Meal Prep Instructions
If you’d like to make these Greek bowls in advance to enjoy throughout the week, here’s what I suggest:
- Divide the cooked rice and chicken between 6 meal prep containers.
- Store the hummus, tzatziki, cucumber tomato salsa, and toppings in their own containers.
- Reheat the chicken and rice in the microwave when ready to eat, then add toppings as desired.
Katie’s Tip: You could fully assemble the bowls in the meal prep containers, but the the cucumber tomato salsa would make the rice soggy and also wouldn’t reheat well.
Tips for Making This Recipe
- Plan in advance — Ideally you’d let the chicken marinate for at least 4 hours before cooking, and the cucumber tomato salsa is best after being chilled for 30 minutes. Read through the recipe card carefully to learn what order I think makes the most sense to prep everything!
- Mix and match the toppings — Make these your tzatziki bowls! You can use any veggie toppings you like, as well as any flavor of hummus. Or, you can omit certain toppings altogether.
- Freeze the chicken and rice, if desired — Cooked rice freezes well (click that link for a tutorial!), and the Greek chicken can either be frozen in the marinade and cooked later or frozen after being cooked.
- Measure with your heart — When it comes to piling on the toppings, load up your chicken tzatziki bowls as you see fit. This recipe makes approximately 6 servings, but personally I don’t feel the need to bust out my measuring spoons when adding the hummus and veggies.
Storage Instructions
Store the rice, chicken, cucumber tomato salsa, hummus, tzatziki, and toppings in separate airtight containers. This is the only way to keep everything fresh and prevent the rice from becoming soggy.
Everything should last up to 5 days, so you can definitely prep everything on a Sunday before a busy week.

Chicken Tzatziki Bowls Recipe
Chicken Tzatziki Bowls are full of Greek-inspired flavor, with turmeric rice, grilled chicken, creamy tzatziki, and fresh veggie toppings. A filling, make-ahead meal that’s perfect for lunch or dinner.
Ingredients
Bowl and Garnishes
- Instant Pot Turmeric Rice
- Greek Marinated Chicken
- Tzatziki
- Hummus
- Feta Cheese
- Fresh Herbs (we like parsley or oregano)
- Lemon Slices
Cucumber Tomato Salsa
- 1 lb. Roma tomatoes, diced into 1 cm x 1 cm cubes
- 1/4 cup red onion, finely minced
- 1 English cucumber, diced into 1 cm x 1 cm cubes
- 1/2 teaspoon garlic, finely minced
- Juice of 1 lemon
- 1/8 teaspoon lemon zest
- 1 to 2 teaspoons fresh oregano, finely chopped (adjust to taste)
- Salt and black pepper, to taste
- Finely shredded romaine lettuce
Instructions
Prepare the Cucumber Tomato Salsa:
- Dice the tomatoes: Slice each Roma tomato in half lengthwise. Remove the seeds if desired for a less watery vegetable mix. Cut each half into strips, then turn and dice into 1 cm x 1 cm cubes.
- Mince the onion: Peel and cut the red onion in half. Lay flat on the cutting board and finely mince it into small, even pieces.
- Dice the cucumber: Slice the English cucumber in half lengthwise. If the seeds are watery, scoop them out with a spoon. Cut into strips, then dice into 1 cm x 1 cm cubes.
- Mince the garlic: Using a sharp knife or a garlic press, finely mince the garlic.
- In a medium mixing bowl, combine the diced tomatoes, minced red onion, diced cucumber, and minced garlic. Add the lemon juice, lemon zest, and finely chopped fresh oregano.
- Stir well to evenly distribute the flavors. Season with salt and black pepper to taste. Stir again. Cover with plastic wrap and refrigerate for 30 minutes to 2 hours to allow the flavors to develop. Meanwhile, prepare the rice and chicken.
Make the Chicken and Rice:
- Marinate and cook the chicken as instructed.
- After the chicken has rested, slice it so it stays tender and juicy. Find the direction of the grain (the muscle fibers) and cut across it rather than along it. Holding the knife at a slight angle helps create wider, more tender slices. Aim for pieces about 1/4 to 1/2 inch thick.
- Prepare the rice in the Instant Pot as instructed.
Assemble the Bowls:
- Arrange the toppings in sections for a visually appealing presentation rather than mixing them together.
- Lay sliced chicken over the rice. Add a scoop or two of the cucumber tomato mixture. Add a small amount of shredded romaine lettuce and feta cheese. Add a dollop of tzatziki and hummus.
- Garnish with fresh herbs and lemon slices. Serve with grilled or toasted pita bread for scooping and dipping.
