Creating this Pineapple Moscow Mule
Summer is finally here (someone just needs to tell the weather that!) and we have months of BBQs, block parties, and other celebrations ahead of us.
Including our 1 year wedding anniversary party that we’ll be hosting at our house for friends and family in 2 months.
Yikes – it is actually 2 months exactly from today (and our backyard still isn’t done being landscaped).
Kevin and I got married on the beach with just our 4 kids. It was a simple, but meaningful ceremony.
I was thrilled to be on a beautiful beach with our family, and to have a built in vacation with all the kids before and after the wedding. But, the plan since last summer has always been to host a party at our home on our one year wedding anniversary.
At the time that seemed so far away, but after all our moving, setting up a new house, getting into a new family rhythm, not to mention regular life….a year has nearly flown by already.
I am really anxious to buckle down and get some more specific plans in place for our anniversary party. One of those things that we really need to get settled on, or at least get a closer idea on, is the food and drink!
Since we’ll be having it as an indoor-outdoor party at our house, I want it to be tasty, perfect for summer, something that isn’t too complicated, and maybe can be prepped ahead a little.
I don’t want to go crazy making really complicated food.
Moscow Mules are Great Summer Party Drinks
For drinks, I’ve envisioned having a drink station with a few of those galvanized metal buckets full of ice and various bottled beverages, along with fixings, garnishes, and mix-ins for a few simple cocktails.
Possibly printing off a few recipe cards for the station, both to serve as DIY drink inspiration and as a little party favor. Something like this Fresh Pineapple Mint Moscow Mule, would surely be a hit at the end of July!
That way, adults can sort of self-serve their drinks and we don’t need to hire servers. After all, we’re not going crazy fancy with this party.
Something special and nice – a way to celebrate our marriage and do a simple vow ceremony, without being formal, for the friends and family that weren’t at our actual wedding last summer.

What’s in a Moscow Mule?
Traditionally, Moscow Mules contain just vodka, lime juice, and ginger beer and they’re often served in copper mugs.
But for this Pineapple Mint Moscow Mule, I added in fresh pineapple juice and mint leaves as well. The pineapple and mint pair nicely with the spicy ginger beer and make this the perfect summer cocktail!
Ginger Beer for Moscow Mules
Bundaberg Brewed Drinks come from a family-owned company from Queensland, Australia and would be a great addition to the party!
I love their distinctive glass stubby bottles, which actually serve the purpose of preserving the product’s integrity, but look really cool, too!
They’re non-alcoholic, so guests can make a variety of cocktails or non-alcoholic cocktails with them as mixers…or they taste great just as is for those who prefer simplicity in their drinks.

How to Make a Moscow Mule
For this particular drink, Fresh Pineapple Mint Moscow Mules, I blended a whole, fresh pineapple and strained out the pulp for that “fresh squeezed” pineapple taste.
In the classic copper Moscow Mule mug, I combined plenty of crushed ice with the fresh pineapple juice, lime juice, Bundaberg Ginger Beer, and vodka.
For a pretty garnish, I topped it off with a spring of fresh mint from my garden and a wedge of fresh pineapple.
You can easily keep Fresh Pineapple Mint Moscow Mule non-alcoholic if you choose not to consume alcoholic beverages, or you are under 21, by omitting the vodka.
The Bundaberg Ginger Beer, Fresh Pineapple Juice, Lime Juice, Mint Spring and Fresh Pineapple Wedge pair perfectly, with or without the addition of alcohol.

Looking Back on This Year
I have so much, still, to share about the last year of our life in this almost year that has gone by way too fast.
Wedding stories and pictures I haven’t completely shared yet. So many new recipes that I’ve photographed and never posted, or recipes Kevin and I have talked about making and not gotten to yet.
Funny kid stories. Wonderful husband stories. Vacation pictures. House pictures. Soon-to-be-landscaped backyard pictures. It has been an amazing year — things I never want to forget, stories that I want to read over and over again.
Things just as good and happy as Our Story: The One About Dating Me For Real.
Eventually, I will get it all chronicled. But, for now, I’m going to buckle down on the planning of our party.

Fresh Pineapple Moscow Mule
A classic Moscow Mule get a fruity twist with this recipe for Fresh Pineapple Mint Moscow Mules.
Ingredients
- 4 ounces Ginger Beer
- 1 tablespoon Fresh Lime Juice
- 2 - 3 tablespoons Fresh Pineapple Juice
- 1 1/2 ounces Vodka
- Crushed Ice
- Sprig of Fresh Mint
- Wedge of Fresh Pineapple
Instructions
For the Fresh Pineapple Juice
- Cut off the top and the bottom of the pineapple. Then, cut the skin off the sides. Slice the fruit away from the center core and cut the fruit into cubes.
- Place the fresh fruit in the blender and blend on the "whole juice" setting, if available. If not, blend on high until completely smooth, adding a small amount of water if needed.
- Then, fit a mesh metal strainer over a large 8 cup sized glass measuring cup. Line it with a paper towel.
- Pour the pureed pineapple over the lined strainer and allow it to strain through until all the juice has made its way into the measuring cup and all that remains in the paper towel is the leftover pulp.
- Alternatively, you can juice the pineapple in a juicer according to manufacturer instructions.
For the Fresh Pineapple Mint Moscow Mule
- Fill a copper mug 2/3 of the way full with crushed ice.
- In the mug, combine 1 tablespoon of lime juice, 2 - 3 tablespoons of fresh pineapple juice, 4 ounces of Bundaberg Ginger Beer, and 1 1/2 ounce of vodka (omit for a mocktail. Stir to combine.
- Garnish with a sprig of fresh mint leaves and a wedge of fresh pineapple.
- Serve immediately
Notes
Before preparing the pineapple juice and the drink recipe, place the copper mug in the freezer to chill it. This helps keep the drink nice and cold and helps prevent the ice from melting as quickly.
You can easily keep this drink non-alcoholic if you choose not to consume alcoholic beverages, or you are under 21, by omitting the vodka.
Do not serve alcoholic beverages to anyone under the age of 21.

This drink is just beautiful. I bet it tastes just as good as it looks. Ginger beer is just freaking amazing.
I wish I lived closer. I LOVE landscaping. We did our place when we moved in and we add to it each year. It’s so much fun but seriously hard work. Our challenge is the grass. Our yard floods so the grass is a hot mess.

I love working in the yard, too. I was just telling Kevin that I would pick that over house work any day. It has just been so tough getting started with all the rain, but we made a ton of progress over the weekend. Soon we’re ready for the fun part – getting the trees and plants in.
