First Day of School Breakfast Favorites
Logan has been having fun with all the getting ready you do during the weeks before school starts. Backpacks, lunchboxes, school supplies, school clothes, new shoes…that’s a lot of stuff to buy! But, who says kids should have all the fun with Back-to-School shopping? Definitely not me! I’ve got some exciting Back-to-the-Kitchen giveaways lined up this week for the rest of us – 4 total and each one more exciting than the next. Check back tomorrow to see what’s on the line-up!
With school starting next week, I am looking forward to a little bit more “me” time than I’ve been able to have this summer. It will be nice to get back into the kitchen without feeling like everything has to be so simple and quick to prepare. And I’m definitely looking forward to cooler temperatures and fall baking. I have several bread recipes I’ve bookmarked recently and I can’t wait to make them!
Since we’re in back-to-school mode I thought I’d share with you some of our family’s favorite breakfast recipes. These are Goodman family tested and will surely give you the fuel you’ll need to get through the first day of school.
If you need something super quick these German Pancake Muffins are the way to go. The prep takes 2 minutes at the most and you’ll only get the blender and a muffin tin dirty making them. Substitute whole wheat flour for added nutrition.
This recipe for Multi-Grain Banana Bread is a healthier take on banana bread, though just as delicious – if not more. Take it from me, a banana hater, this recipe is good!
Plan ahead and put together a batch of this 5 Grain Pancakes with Flax pancake mix. With your own homemade mix on hand you’ll be able to whip up pancakes in no time.
Steel cut oats are a breeze to prepare when you mix up the recipe for these Cherry and Tangerine Steel Cut Oats the night before and allow the oats to soak. Substitute dried cranberries and orange zest for cherries and tangerine.
Zucchini Apple Spice Muffins are a great way to use up excess garden zucchini. Even my pickiest eater loves them. Feel free to substitute whole wheat flour for all-purpose or use a combination of the two.
If you prefer a savory breakfast, try these Black Bean Breakfast Burritos. This recipe is sure to give you the energy you need thanks to all the protein and fiber.

Great breakfast recipes. School for you begins so early! We don't begin until the 30th. We go to a one room school house…15 kids in all (K-6th) and love it 🙂

We had a very similar Kindergarten experience. I was excited to be joining a community of families (in fact it was a Catholic school and I expected there to be a particularly strong community!), to give my daughter the opportunity to learn more than I've taught her, to spend time with peers, etc. It was really disappointing. The teacher looked well past her abilities (she was reading chapter books, they spent the year learning each letter in. great. detail.). Her eyes glazed over. No visiting the classroom. No younger children. Ever. How was I to help with a 3 year old and a baby? Fundraisers. The children were so worldly. Josie was not. She liked to play fairies. They liked to play Hannah Montana. (Still don't get that!). We suffered out the year and tried homeschooling out for the summer. It's been a Godsend (for this pretty not-very-religious family). The structure of 'school' has freed us from a lot of our mommy-child conflict, we've made AMAZING friends in our secular homeschooling groups, are part of a co-op of like minded families and share teaching. I, too, was excited about the elusive Me time. The kids are playing 'booster rocket' right now, so I'm drinking my tea on the couch. That's about as much me-time as I usually get in a day (except Tuesdays, when we swap with another family–the kids just think they're going to play at a friend's house. I know better!). There are SO many options out there. Maybe just a year of Montessori Kindergarten (half day-half price?) A parochial school (often cheaper than full-on private). You'll find the right place!
