Did you know that January is National Soup Month? That’s pretty perfect timing, because there is nothing I like better on a freezing cold winter evening than a bowl of hot soup for dinner.
Sometimes I have days where it seems no matter how hard I try, I can’t shake the feeling of being cold. Days like that are soup days for sure! Not only is soup delicious, but I love how it literally warms you up from the inside.
I love this easy broccoli cheese soup recipe. Broccoli Cheese Soups are one of my favorites. I love the thick, cheesy, creamy base for the vegetables.
In this creamy broccoli soup, I’ve added some extra vegetables — in the form of carrots and kale — for a pop of color, texture, and nutrition. I also added a generous helping of one of my new favorite ingredients, nutritional yeast.

To make this easy broccoli cheese soup recipe, you’ll need:
- Olive oil
- Yellow onion
- Garlic
- Nutritional yeast
- Carrots
- Hot water
- 1 package Bear Creek Cheddar Broccoli Soup Mix
- Broccoli florets
- Kale

How to Make Cheesy Broccoli Soup
Thanks to the broccoli cheddar soup mix used in this recipe, this soup comes together so quickly!
- Sauté the onion until softened.
- Add the garlic, nutritional yeast, and carrot and sauté for an additional 3 minutes.
- Pour in the hot water, then bring the mixture to a boil.
- Slowly whisk in the Bear Creek Cheddar Broccoli Soup Mix until the mixture is smooth with no lumps.
- Stir in the broccoli and kale. Simmer for 10 to 15 minutes, then serve.
Do I Have to Use Nutritional Yeast?
No, but I highly recommend giving it a go! It adds a cheesy flavor to the creamy broccoli soup, plus lots of nutrients. But I’m sure you could also stir in shredded cheddar cheese, if desired.
Tips for the Best Broccoli Cheese Soup
I added kale to this cheesy broccoli soup because I like how the normally hearty green cooks down in the soup. But you’re welcome to add spinach instead if that’s what you have on hand.
To make this broccoli carrot soup even easier to make, you may be able to stir in frozen carrots and broccoli instead of fresh. I’ve only ever made this recipe as written, but I bet frozen would work!
Soups that contain dairy, such as this cheesy broccoli soup, don’t usually freeze well. I recommend enjoying this creamy broccoli soup within a few days of making it.

This recipe for Easy Cheesy Broccoli, Kale, Carrot Soup is incredibly simple to whip up for dinner on a busy and the perfect way to warm up on a cold winter evening.
Ingredients
- 1 tablespoon Olive Oil
- 1 medium Yellow Onion, diced
- 1 1/2 teaspoons minced Garlic
- 1/2 cup Nutritional Yeast
- 5 Carrots, peeled and sliced into 1/4 inch rounds
- 8 cups Hot Water
- 1 package Bear Creek Cheddar Broccoli Soup Mix
- 8 ounces Broccoli Florets
- 2 ounces chopped Kale Leaves
Instructions
- In a large stockpot or cast iron soup pot, heat the olive oil over medium heat. Add the diced onion and saute for 5 minutes, or until golden and fragrant. Add the garlic, nutritional yeast, and carrot and saute for an additional 3 minutes.
- Slowly pour the hot water into the pot, whisking with a wire whisk. Bring to a boil and slowly whisk in the Bear Creek Cheddar Broccoli Soup Mix until the mixture is smooth with no lumps.
- Add the broccoli and kale to the soup. Simmer uncovered for 10 - 15 minutes. Serve.
