You’ve probably noticed by now that my boy Logan is all about the sports. Checking scores and brackets daily. Watching as many games as he can get his hands on.
It’s pretty funny to watch this transformation in him. He’s going from a kid who didn’t really even have the patience to sit through an entire game to the kid who wants to have game day parties. He constantly rattles off stats like you wouldn’t believe. I think that kid must dream in sports, because it seems like it is on his mind 24/7.
With March Madness underway, you might be thinking of getting together with some friends to watch one of the games this weekend. When you’re having a group of friends, or even just gathering as a family, over to watch sports you’ll want to keep any snacks simple so you can focus on the game.
No need to go overboard, just a few things to much on while enjoying the game works best. This buffalo cream cheese ball is perfect for game day snacking. It’s loaded with cream cheese, blue cheese, green onion, celery, red bell pepper, hot sauce, walnuts, and shredded chicken. The ingredients are all rolled into a ball, hence the name buffalo cream cheese ball, and rolled in more walnuts.

- Beat together the softened cream cheese and hot sauce until smooth.
- Stir in the blue cheese, chicken, celery, red bell pepper, green onion, and chopped walnuts.
- Shape the mixture into a large ball and gently roll in chopped walnuts to coat.
- Place in fridge to chill for 2 hours.
- Garnish with chopped green onion and additional blue cheese crumbles just before serving.

Note that you must use brick-style cream cheese for this recipe and not the whipped kind that comes in a tub. Full-fat brick-style cream cheese holds its shape the best and can withstand the addition of shredded chicken and chopped veggies.
To make your life even easier, buy a rotisserie chicken from the grocery store and shred part of it to use in this cream cheese ball recipe.
And if you’re vegetarian, you’re welcome to omit the shredded chicken altogether.

Buffalo Cream Cheese Ball
This Buffalo Cream Cheese Ball features hot sauce, shredded chicken, celery, green onion, blue cheese, and chopped walnuts. A twist on the traditional cheese ball recipe.
Ingredients
- 16 ounces Cream Cheese, softened
- 2 - 3 tablespoons Hot Sauce, according to your heat preferences
- 2/3 cup + 1 tablespoon Blue Cheese Crumbles (divided)
- 1 cup Shredded or finely chopped Chicken
- 1/3 cup Celery, diced
- 1/4 cup Red Bell Pepper, diced
- 1/3 cup + 1 tablespoon Green Onions, sliced (divided)
- 1 cup Fisher Walnuts, finely chopped
Instructions
- In a medium sized mixing bowl, add the cream cheese and hot sauce. Beat with a hand mixer until combined and smooth.
- Using a spatula or wooden spoon, stir in 2/3 cup blue cheese, chicken, celery, red bell pepper, 1/3 cup green onions, and 1/4 cup Fisher Walnuts into the cream cheese mixture until well combined.
- Shape the cheese mixture into a large ball and roll into the remaining nuts to coat the outside. Place on a plate and allow to chill for 2 hours, or up to overnight.
- Garnish with the remaining 1 tablespoon of blue cheese and 1 tablespoon of green onions. Serve with celery sticks and pretzels or crackers.
