Creating this Brown Sugar Glazed Pineapple
I’ve been shopping at Sprouts pretty regularly for the last year or so since I was trying to trim my grocery spending a bit. I started noticing early last summer that Sprouts always had amazing deals on their produce, and fresh pineapple was one of the things that was frequently on sale.
Fresh pineapple is one of my favorite summertime fruits! I love eating it plain for a snack or something sweet after dinner. But it is delicious grilled, too!
Grilling Pineapple for Brown Sugar Glazed Pineapple
Pineapple is really quick and easy to grill because it only needs a couple of minutes per side to get some nice golden grill marks, and to heat the fruit through.
But I didn’t just want to grill pineapple. I wanted to make something interesting and different with grilled pineapple.
Ever since last summer I have been wanting to experiment with a grilled pineapple lettuce wrap and finally got around to it. After some experimenting I came up with this recipe for Brown Sugar Lime Grilled Pineapple Lettuce Cups.

Tools that are Helpful for Preparing Grilled Pineapple
Here are a few of my favorite kitchen tools to use when cooking this brown sugar glazed pineapple on the grill:
- Cutting board — If the cutting board slides around on your countertop, place a clean kitchen towel underneath it to hold it steady.
- Chef’s knife – A sharp knife is important, especially for cutting the pineapple! Make sure it’s sharpened properly before cutting and slicing the ingredients.
- Paring knife — Makes removing the eyes of the pineapple easier and safer (those are the poky brown dots that are left on the flesh after the skin has been removed).
- Pineapple corer — Not needed, but as the name suggests it makes removing the core of the pineapple so much easier, faster, and cleaner.
- Measuring Cups and Spoons — To accurately measure the ingredients for the brown sugar glaze.
- Citrus juicer — Makes juicing limes and other citrus fruits much easier. Be sure to roll your limes on the counter before slicing and juicing them to help release even more juice.
- Zester — To zest the lime.
- Saucepan — To cook the rice. Or, cook the rice in an Instant Pot.

- Water
- Canned Coconut Milk
- Jasmine or Basmati Rice
- Lime Zest
- Salt
Lettuce Cups:
- Coconut Lime Rice
- Brown Sugar Lime Grilled Pineapple
- Shredded Coconut
- Butter Lettuce
- Green Onions
- Fresh Cilantro

How to Make Brown Sugar Glazed Pineapple on the Grill
Grilled pineapple rings are served on a bed of fluffy, coconut lime rice on top of a butter lettuce leaf.
First, you’ll make some coconut lime rice. While the rice cooks, you’ll prepare the mixture of brown sugar, butter, lime juice, and salt.
Then, baste the sliced pineapple rings with the brown sugar glaze.
Grill them up (directly on the grill grates) for a few minutes on each side until they’re golden and warm. The brown sugar mixture with caramelize a little giving it a nice taste and glossy glaze.

There are tons of ways that you could serve this delicious grilled pineapple recipe! The brown sugar glaze goes well with savory as well as sweet options. Here are our two favorite ways to serve grilled pineapple:
Pineapple Lettuce Wraps with Coconut Rice
You’ll place a bit of rice in a butter lettuce leaf, sprinkle a little bit of shredded coconut, and top with a half a ring of grilled pineapple. For garnish you can add sliced green onions and chopped fresh cilantro.
As a Sweet Treat
Wondering how else you could serve this grilled pineapple? Skip the rice and lettuce and turn it into a delicious dessert with a scoop of ice cream. The brown sugar glazed pineapple tastes so good with vanilla ice cream or coconut ice cream.
You could even sprinkle a little toasted coconut top of the pineapple. This makes great dessert for summer days!
I really don’t think that you can go wrong when you’re talking about pineapple!

Grilled Pineapple with Brown Sugar Glaze
Fresh pineapple is tossed with butter, brown sugar, and lime, and then grilled for a delicious treat.
Ingredients
Grilled Pineapple with Brown Sugar Glaze:
- 30 ounces Fresh Pineapple, cored and sliced into 1/2 inch rounds
- 1/2 cup Sprouts Salted Butter, melted
- 1/2 cup Brown Sugar
- 1/2 of a Fresh Lime, juiced
- Pinch Salt
Coconut Lime Rice:
- 1 3/4 cup Water
- 1 3/4 cup Canned Coconut Milk
- 2 cups Jasmine or Basmati Rice
- Zest of 1 lime
- 1/2 teaspoon Salt
Lettuce Cups:
- Coconut Lime Rice
- Brown Sugar Glazed Grilled Pineapple
- 2 tablespoons Sprouts Organic Shredded Coconut
- 1 head Butter Lettuce, leaves removed from head and washed
- 2 Green Onions, thinly sliced
- 2 tablespoons Fresh Cilantro, finely chopped
Instructions
Coconut Lime Rice:
- Combine all ingredients in a medium-sized saucepan.
- Bring to a boil over medium-high heat. Once boiling, cover with a lid and decrease heat to low.
Cook for 15 – 20 minutes, until liquid has all absorbed. Prepare the pineapple while the rice cooks. - Remove rice from heat and let sit, covered for 5 minutes.
Brown Sugar Lime Grilled Pineapple:
- Preheat grill to medium heat.
- In a small mixing bowl, combine the butter, brown sugar, fresh lime juice, and salt.
- Place the Pineapple slices on a baking sheet and drizzle with the brown sugar mixture.
- Place the pineapple on the preheated grill, sugar side down and grill 2 – 3 minutes, or until sugar mixture is golden and caramelized.
- Brush the tops with the remaining brown sugar mixture left behind on the baking sheet using a silicone basting brush.
- Flip and grill the other side 2 – 3 minutes, or until the sugar mixture is golden and caramelized. Remove from the heat and transfer to the baking sheet. Cut each round in half.
Lettuce Cups:
- Divide the rice between the lettuce leaves.
- Sprinkle rice with green onions and shredded coconut.
- Top with 1/2 round of Grilled Pineapple.
- Sprinkle with chopped Cilantro. Serve.
