It is hard to believe that summer is just around the corner. We’ve had really mild warm weather or cold rainy or snowy weather. I’ve only turned the air conditioner on in the house once so far this year. That feels a little bit awesome. A year ago this time it was practically full on summer.
Even thought our weather has been pretty mild, I still have summer on the brain. There are only a few weeks of school left and before we know it, the pool will be open and we’ll be busting out our shorts and flip flops for good…not until the next snow.
With summer comes the fun of lazy days and get togethers with family and friends. My favorite no-fuss unofficial summer get together was taking Logan and Madeline to the neighborhood pool and meeting up with our friends for a day of fun in the sun.
I brought a small cooler packed with healthy, but tasty snacks and drinks to keep us fed and cool. We rarely at lunch at home during the week because the kids and I spent our days swimming at the pool with friends and eating poolside.

In the summer I look for simple and refreshing recipes to satisfy our hunger. When I focus on foods bright in color and flavor, I am able to combine a few basics to create a really tasty meal or snack.

Can I Use Frozen Peaches?
Yes, you can definitely substitute thawed, frozen peaches if it isn’t the right time of year to get ripe, beautiful peaches. Your batch of homemade peach salsa won’t be as sweet or juicy, but it will still work.
How to Make Peach Salsa
This fresh salsa with peaches and avocado is so simple to make! Here’s a quick overview of the process:
First, you’ll dice the avocado. Then, stir the avocado pieces with the lime juice and lime zest. After that, combine peaches, poblano pepper, red onion, and cilantro with the avocado mixture. Stir gently so you don’t mash the avocado pieces.
That’s it! After preparing, serve with your favorite tortilla chips!

Can I Make Salsa with Ripe Peaches Ahead of Time?
If you want to make this fresh peach salsa recipe ahead of time, I recommend assembling everything except the avocados. Then, stir the avocados in to the prepared batch of peach salsa just before serving.

Here are a few suggestions to tweak this avocado and peach salsa recipe according to your personal preferences:
Like extra spicy salsa? For spice add extra of your favorite chili peppers, such as jalapeño peppers, green chilis, poblano peppers, anaheim peppers, etc. Peppers are best finely diced in this recipe. Keep the seeds for extra heat, or scrape them out for a milder spice flavor. Or, make roasted peppers for a slightly smoky spicy flavor.
Don’t like cilantro? If you’re one of the up to 15% of people who find that cilantro tastes like soap (it’s a genetic thing), try adding some fresh parsley in place of the cilantro, or leave it out all together.
Got garden bell peppers? Try adding some diced green peppers or red peppers for extra veggies and color if you need help using them up.

Avocado Peach Salsa

Ingredients
For the Peach Salsa
- 8 ounces diced Fresh Peaches
- 8 ounces diced Avocado
- Lime Juice from 2 limes
- Zest from 1 Lime
- 1 Poblano Pepper, deseeded and diced
- 1/4 cup of diced Red Onion
- 1 handful of Fresh Cilantro, finely chopped
For Serving
- Tortilla Chips
Instructions
- Dice the peaches, avocado, poblano pepper, and red onion. Set aside.
- Juice the limes into a measuring cup. Finely chop the fresh cilantro and zest the lime.
- Add the diced avocado, lime juice, and lime zest to a medium bowl.
- Gently stir until the avocado is completely coated with the lime juice.
- Then, add the diced peaches, poblano pepper, red onion, and cilantro. Stir until all ingredients are combined
- Serve immediately with your favorite tortilla chips.
