This time of year I start thinking about spring baking. There are all kinds of reasons to bake something full of fresh bright flavors, but just around the corner are Easter and Mother’s Day Brunches to consider baking for.
Bananas are not my most favorite fruit, in fact they’re probably not even in the top 10. However, I do love banana bread! I love your traditional banana bread, and I love to create new takes on old favorites.
The idea to make a Coconut Lime Banana Bread with Lime Glaze immediately came to mind as the perfect recipe to feature for an Easter or Mother’s Day brunch spread.
However, you could definitely enjoy this tasty bread any time of the year! This loaf of banana bread is especially great for coconut lovers!

Coconut Banana Bread Ingredients
In this recipe I’ve tweaked a classic banana bread recipe into something that tastes a little more spring-y. You’ll need the following ingredients to prepare this Coconut Lime Banana Bread:
- All Purpose Flour
- Salt
- Baking Powder
- Sugar
- Butter
- Coconut Oil
- Eggs
- Ripe Bananas
- Vanilla Extract
- Lime Juice
- Lime Zest
- Shredded Coconut
For the dry ingredients in this Banana Bread recipe, you have the typical items – flour, salt, baking powder, and sugar.
I use both coconut oil and butter in the bread for a perfect buttery coconut flavor, but I’ve also added in some shredded coconut for extra flavor and texture.
Along with the coconut, lots of lime zest, a bit of lime juice, and vanilla extract are added to the batter. The result is a banana bread that has a sweet, citrusy, and almost tropical flavor to it.
Lime Glaze Ingredients for Coconut Banana Bread
- Powdered Sugar
- Lime Juice
- Lime Zest
- Toasted Coconut for topping, optional
You can definitely leave the bread as is, but I decided to take it up a notch by glazing the whole thing with a simple lime glaze made of powdered sugar, lime juice, and lime zest.
While the lime glaze was still wet, I sprinkled plenty of toasted coconut for a crunchy topping to the glaze.
How to Make Coconut Banana Bread
- First, start by preheating your oven and greasing a 9×5 inch loaf pan. You could also line the pan with parchment paper.
- Next, you’ll combine all of the dry ingredients in a large bowl and whisk until they’re well mixed.
- Then, in the bowl of a stand mixer you will cream the butter and coconut oil together.
- Next, when the butter is creamed, add the eggs one at a time.
- Then, add the bananas, vanilla, lime juice, and zest to the batter.
- Switch to the paddle attachment, then add the flour mixture to the wet mixture 1 cup at a time and slowly mix on low speed.
- Last, stir the shredded coconut in by hand.
Baking Coconut Banana Bread
This recipe for homemade banana bread with sweet coconut bakes for approximately 40-55 minutes. However, altitude and oven temperature can affect your baking time, so its best to check the bread at 40 minutes and add more time in increments of 5 minutes until the bread is done.
Next, after baking the Banana Bread, it is important to cool it in the pan for 15 minutes before you remove it from the pan, otherwise it may fall apart.
Then, after the 15 minutes, cool the banana-coconut bread on a wire rack until it reaches room temperature.
How to Glaze Banana Bread
Glazing this Coconut Lime Banana Bread with Lime Glaze is easier than you might think, but make sure you let the bread cool completely before adding the tangy lime glaze on top of the loaf
- First, to make the glaze, combine the ingredients in a small bowl or a glass measuring cup.
- After the bread has cooled completely, place the wire cooling rack with the bread over a piece of parchment paper. Pour the lime glaze over top, allowing it to drizzle down the sides.
- If desired, sprinkle the glaze (while still wet) with toasted coconut. Let the glaze harden completely before slicing the bread.

More Tips for Making this Coconut Lime Banana Bread Recipe
- Personally, I like to puree the bananas so they are completely smooth and that’s how I prepare this recipe. If you like chunks of banana, just mash the bananas with a fork and proceed with the recipe.
- Having trouble juicing your limes for this recipe? Try this tip for how to squeeze the most juice from limes.
- Don’t use underripe bananas in this recipe. The best bananas are overripe (but not spoiled) bananas. They mash better and contain more moisture. Use bananas that are spotted or mostly black on the exterior.
How Should You Store Banana Bread
For best results, store this moist banana bread in a sealable container, a gallon zip top bag, or on a plate wrapped with plastic wrap. Storing it in the refrigerator will dry the bread out quickly and is not recommending.
For the best freshness, consume the bread within about 3 days.
Can You Freeze Banana Bread?
Yes, you can freeze banana bread! For this Coconut Lime Banana Bread recipe, I recommend freezing it without the glaze and either omitting the glaze or adding it after you’ve thawed the bread.
To freeze the bread:
- First, cool the bread completely as mentioned in the instructions.
- Next, label a freezer grade zip top bag with the date and contents for your records.
- Add the banana-coconut bread to the bag. Zip the bag and remove as much air as possible.
- Then, transfer to the freezer.
You could also store the bread in the freezer using a vacuum sealer according to the manufacturer’s instructions.
Serving this Coconut Banana Bread with Lime Glaze
I’ve made this loaf of Coconut Banana Bread with Lime Glaze several times in the past.
I especially liked to make it for brunch in the spring and summer when we have guests and everyone always raves about how unique the flavors are for a banana bread.
We like to serve it with eggs and bacon with a side of fresh fruit cut up for a big brunch spread.

Coconut Lime Banana Bread with Lime Glaze

Ingredients
For the Coconut Lime Banana Bread
- 2 cups Bob's Red Mill Organic Unbleached White All Purpose Flour
- 1 teaspoons Salt
- 1/2 teaspoon Baking Powder
- 1/2 cup plus 2 tablespoons Organic Cane Sugar
- 3 tablespoons butter, room temperature
- 4 tablespoons coconut oil, room temperature
- 2 eggs, room temperature
- 3 medium ripe or extra ripe bananas, mashed or pureed
- 1 teaspoon Vanilla Extract
- 1/2 tablespoon Lime Juice
- zest of 2 Limes
- 1/2 cup Shredded Coconut
For the Lime Glaze
- 1 1/2 cups Powdered Sugar
- 1 - 2 tablespoons Lime Juice
- zest of half a Lime
Topping
- 1/3 cup Toasted Coconut, optional
Instructions
For the Coconut Lime Banana Bread
- Preheat oven to 350 degrees F. Grease a 9x5 inch loaf pan. Set aside.
- In a medium bowl, combine the flour, salt, baking powder, and sugar. Whisk until well sifted.
- In the bowl of a stand mixer, add the butter and coconut oil. Mix on medium-high speed until well creamed using the whisk attachment, about 2 minutes. Scrape down the sides as necessary. Beat in the eggs, one at a time.
- Then, add the mashed or pureed bananas, vanilla extract, lime juice and lime zest to the batter.
- Remove the whisk attachment and switch to the paddle attachment. Add the dry ingredients, 1 cup at a time, and mix on low speed until just combined. Stir in the shredded coconut by hand using a spatula or wooden spoon.
- Transfer the batter to the prepared pan. Bake at 350 degrees F for 40-55 minutes, or until done in the center and nicely browned crust has developed on top. Check in the center using a toothpick.
- Cool for 15 minutes before removing from pan. Transfer to a wire cooling rack and cool completely before covering with the glaze.
For the Lime Glaze
- In a bowl, combine the powdered sugar and lime juice. Stir until combined and liquid. Then, stir in the lime zest.
- After the bread has cooled completely, place the wire cooling rack with the bread over a piece of parchment paper. Pour the lime glaze over top, allowing it to drizzle down the sides.
- If desired, sprinkle the glaze (while still wet) with toasted coconut. Let the glaze harden completely before slicing the bread.
Notes
Store in an airtight container or gallon sized zip top bag. For best results, consume within 2 - 3 days. Unglazed bread freezes well.
