Coconut Cream Cheese Pastry Bites

Gorgeous weather has officially arrived in Kansas City. And as much as I love spending time in my kitchen, there is no place I’d rather be than outside soaking up the warm sunshine.
So when it comes to cooking lately, I have been channeling my inner Rachael Ray and adapting just about everything into 30-minute meals. Or in this case, 30-minute desserts!
These adorable little coconut pastry bites were the product of my all-too-common impulsiveness. In the hour between work and meeting up with a group of friends yesterday, I suddenly decided that:
a) I wanted to bring treats. Cute treats.
b) The adorable new coconut slivers I bought at Whole Foods were calling my name.
c) And…that puff pastry always makes the world a happier place.
So thus, these Coconut Cream Cheese Pastry Bites were born. And truly, they could not have been easier. These “bites” are just just simple little squares (or you could make them larger squares or circles) of puff pastry, topped with a coconut cream cheese sauce, and then garnished with toasted coconut.
Classy, quick, and hopelessly delicious. My friends absolutely adored them and have already been calling to ask for the recipe.

My favorite thing about simple desserts like this is that they lend to endless variations. So for those of you who would like to get creative, a few other ideas might be to:
- Layer a slice of fruit underneath the cream cheese sauce, such as kiwi, strawberries, mango or pineapple
- Garnish the coconut bites with some chopped nuts (such as almonds, pecans, or macadamia nuts) or shaved chocolate in addition to the toasted coconut
- Substitute some rum for the coconut milk in the cream cheese sauce for an extra kick
However you prepare them, I guarantee these little pastry bites will be a wonderful treat for your friends and family. And with such minimal prep time, they will give you all the more time to spend with those you love….and out in the great outdoors! Enjoy!!

Coconut Cream Cheese Pastry Bites
These “bites” are just just simple little squares (or you could make them larger squares or circles) of puff pastry, topped with a coconut cream cheese sauce, and then garnished with toasted coconut.
Ingredients
- 1 sheet (2 sheets) frozen puff pastry, thawed
- 1 (8 oz.) package cream cheese, room temperature
- 1/2 cup sugar
- 1/2 cup powdered sugar (or more)
- 2 Tbsp. coconut milk
- 2 cups coconut flakes, toasted
Instructions
- Preheat oven to 400 degrees.
- Lay out thawed puff pastry on a floured surface, and gently using a rolling pin to even out the creases. Use a pizza cutter or a large knife to cut the pastry into your desired shapes. (I made 1.5-inch squares, but you could do larger squares, circles, rectangles, or even bake the sheet whole.) Lay out on a baking sheet or two. Then use a fork to then poke numerous holes into the middle of each piece, to minimize inflation.
- Bake pastry according to package directions until it is puffed and very lightly golden, about 12-15 minutes. Remove and let cool.
- While pastry is baking, use an electric mixer to whip cream cheese on medium-high speed until smooth. Add sugars and coconut milk, and continue beating on medium speed until smooth. Add more powdered sugar if you would like a thicker sauce.
- Spread sauce on each pastry bite, and then garnish with toasted coconut. Serve immediately or refrigerate.
Notes
To toast the coconut, preheat your oven to 400 degrees F. Spread the coconut out in an even layer on an ungreased baking sheet, then bake for 6-10 minutes, or until coconut is lightly browned. Watch it carefully so that it does not burn.

I was looking at those coconut slivers the other day too! Would it be wrong just to eat them out of the container mixed with ice cream? I’d mix them with cream cheese in the tub too, but we keep it classy around here. 🙂
