Watermelon, Feta, and Mint Salad
I love watermelon as a side dish in the summer. This recipe for Watermelon Salad has a great combination of flavors – sweet and salty with a syrupy balsamic glaze and a touch of mint.
Making this Watermelon Feta Salad Recipe
After my post yesterday on feta flavor pairings, I decided I would take some of the suggestions from The Flavor Bible and put them to the test. Watermelon and mint were both mentioned as flavor matches for feta. A little experimentation was in order!
I admit, I was most intrigued by matching something salty, like cheese, with something as sweet as melon. Never before had I really eaten anything else with watermelon. Usually, it was just watermelon alone or in a fruit salad. Or at most, a Watermelon Lemonade.
Now I was curious enough to give it a try. A quick search for “watermelon and feta” gave me several ideas to combine the cool sweetness of the watermelon with fresh herbs and salty feta cheese.
What I Love About this Delicious Watermelon Salad
This turned out to be a really simple salad and a more grown-up way to eat watermelon with a BBQ dinner.
I love the combination of sweet and salty and the way the mint played off of both flavors. The syrupy balsamic glaze added just the right acidity. And it was a nice change from a typical garden salad.
I served some balsamic glazed grilled beef skewers and Israeli couscous tossed with grilled garden tomatoes (sweet 1 millions and yellow pear).

How to Make Watermelon Feta Salad
It takes just a few minutes of prep to make a large bowl of this refreshing salad with sweet watermelon and salty feta cheese. Here’s a quick overview of the process:
First, you’ll cut the watermelon. Then combine the juicy watermelon with the arugula, salty cheese, and red onion slices on a large serving bowl or serving plate.
After that, drizzle the salad with balsamic glaze and add the fresh mint.
How to Make the Balsamic Glaze for the Salad
To make the balsamic glaze, combine the balsamic vinegar and brown sugar in a small saucepan. Bring the mixture to a boil, then simmer over medium-low for 6-7 minutes until reduced to approximately 1/4 cup. Cool completely.

How to Store Leftovers
Leftovers should be transferred to an airtight container and stored in the refrigerator. Leftover watermelon salad will last for about 1-2 days.
However, you can extend the life of your leftovers by an extra day or two by not dressing the entire salad. Instead, drizzle the balsamic glaze only over the portions that are served.

Watermelon Salad with Feta and Mint
I love watermelon as a side dish in the summer. This recipe for Watermelon Salad has a great combination of flavors - sweet and salty with a syrupy balsamic glaze and a touch of mint.
Ingredients
For the Watermelon Salad
- 8 cups Seedless Watermelon cut into 3/4-1 inch sized pieces
- 4 ounces Baby Arugula
- 1/4 cup thinly sliced Red Onion
- 7 ounces Crumbled Feta Cheese
- 2 tablespoons Balsamic Glaze
- a handful of Fresh Mint Leaves, for garnish
- Salt and Pepper, to taste
For the Balsamic Glaze
- 3/4 cup Balsamic Vinegar
- 1 tablespoon Brown Sugar
Instructions
To Make the Watermelon Salad
- Wash and dry the outside of the watermelon.
- Then, using a sharp knife, cut the watermelon into pieces on a cutting board, using only the red portions. Discard the rind. Alternatively, use a melon baller to cut the watermelon into round balls.
- Then, combine the watermelon pieces with the baby arugula, red onion, and feta cheese in a large serving bowl.
- Drizzle the salad with the balsamic glaze and garnish with fresh mint leaves.
- Season to taste with salt and pepper if desired.
To Make the Balsamic Glaze
- Combine the balsamic vinegar with the brown sugar in a small saucepan. Stir to combine.
- Bring the mixture to a boil, then reduce heat to medium-low, and continue cooking for 5-7 minutes, or until the balsamic vinegar has reduced to about 1/4 cup.
- Let cool completely.
Notes
Recipe Adaptations
- Try using a combination of watermelon, honeydew melon, and cantaloupe, or red and orange/yellow watermelon varieties for even more color in this recipe!
- A good substitute for fresh mint if you don't have it is fresh basil.
- Don't have or don't like arugula? Leave it out, use mixed greens, or baby spinach instead.

In all honesty, I should say that I used goat cheese instead of standard feta (as that was what we had in the house), but I adored this salad. Simple, good ingredients: an amazing result!
