Recently I had some fun in the kitchen experimenting with different variations of twice baked potatoes. That experimenting resulted in a delicious recipe for broccoli and cheese baked potatoes.
These loaded twice baked broccoli cheese potatoes have all the same goodness of a regular loaded baked potato, plus some broccoli all mixed together with the potato pulp, stuffed and baked to gooey perfection!

These twice baked broccoli cheese potatoes have a simple ingredients list. Here’s what you’ll need to make this recipe:
- Russet Potatoes
- Sour Cream
- Cream Cheese
- Chicken Broth
- Fresh Broccoli Florets
- Cheddar Cheese
- Green Onion
- Cooked Bacon Crumbles

How to Make Twice Baked Broccoli Cheese Potatoes
Don’t let the “twice baked” part of this recipe fool you, it’s a very easy recipe with minimal steps! Here’s how the broccoli and cheese baked potatoes are made:
- Prepare a rimmed sheet pan by lining it with aluminum foil or parchment paper.
- Using a fork, pierce the potatoes all over. Cook the potatoes until fork tender.
- Slice potatoes in half and scoop out the potato flesh into a large mixing bowl. Reserve the empty potato skin halves and place on the prepared sheet pan.
- Combine the potato insides with the sour cream and cream cheese and mash using a fork or a potato ricer.
- Stir in the broth as needed until the potato filling reaches your desired consistency.
- Then, stir in the broccoli, half of the cheddar cheese, green onion, and the bacon pieces.
- Divide the potato mixture evenly between the potato halves and add extra cheese on top of each potato.
- Place in the oven and bake at 375 degrees F until heated through and the cheese on top is melted.

First, assemble the stuffed potatoes. Then, place them on the prepared baking sheet. Instead of baking them, transfer the pan to the freezer and freeze until solid. Then, when the twice baked potatoes are frozen, transfer them to a freezer safe container, a freezer bag, or vacuum seal them.
How to Cook Frozen Twice Baked Potatoes
These broccoli cheese baked potatoes are best thawed first before baking. Transfer them to the refrigerator the night before cooking and let them thaw completely.
Then, bake as the recipe instructs. They’ll need about 5 extra minutes since they’re coming cold from the refrigerator.
Tips for Making Broccoli Cheese Baked Potatoes
- Alternatively, this recipe is a great way to use up leftover holiday ham. Just dice it up and use it in place of the bacon.

- Be very careful when hollowing out the potatoes. You don’t want to poke any holes in the potato shells!
- I used fresh, steamed broccoli for this recipe, but I bet you could use frozen, cooked broccoli instead if desired.
- You can substitute plain, unsweetened Greek Yogurt for the sour cream if you like.
