Fresh Strawberry Galette to Welcome Spring!
Just outside the front door of my very first childhood home was a patch of strawberries. I don’t remember much else about that house, but it holds a special place in my memory because it was the beginning of my love affair with strawberries.
For me, strawberries mark the beginning of warmer days. It’s time for sunshine, late nights, pool parties, picnics, and I’ve got a basket full of fresh strawberries here to get it all started!
Hardly anything tastes better than a fresh, juicy strawberry in the early days of summer. The kids and I can, and often do, eat flats of fresh strawberries plain, plucking off the stems as we dig in.

Creating this Recipe for Fresh Strawberry Galette
This week I let my strawberry obsession get the best of me and I have far more strawberries waiting for me in the fridge than can be eaten in one sitting.
I’ve been trying to come up with recipes that would showcase the strawberries’ naturally delicious flavor and I finally met with success.
This Fresh Strawberry Galette emphasizes the sweet juiciness of the strawberries without much added sugar.
What is a Galette?
A galette is essentially a free form pie without the pie pan.
Galettes work great with fruits because the filling is typically much thicker than a custard pie and so you don’t need the sides of the pie plate to keep the ingredients in. Instead, you just fold the edges of the crust over top of the fruit.
Tools Needed to Make this Recipe
- Measuring Spoons and Cups – to properly measure the ingredients
- Bowls – for combining various ingredients
- Wire Whisk – for mixing the dry ingredients
- Food Processor or tools to Cut Butter Into Flour
- Rolling Pin – to roll out the galette crust
- Baking Sheet – for baking the strawberry galette
- Parchment Paper – to line the pan
- Pastry Brush – to apply the egg wash
Strawberry Galette Ingredients
The great thing about this Fresh Strawberry Galette recipe is that it starts with some pretty simple ingredients. Here’s what you’ll need to make this recipe:
- All Purpose Flour
- Salt
- Unsalted Butter
- Plain Greek Yogurt
- Cold Water
- Fresh Lemon Juice
- Fresh Strawberries
- Ground Almonds
- All Purpose Flour
- Granulated Sugar
- Egg Yolk

How to Make a Strawberry Galette
Here’s an overview of the process for preparing this recipe:
- To prepare for making the recipe, line a baking sheet with parchment paper and set aside.
- Then, you’ll move on to preparing the crust. This recipe recommends using a food processor to combine the flour, salt, and butter, but you can check out these tips for cutting butter into flour for some more ways to do this if you don’t have a food processor.
- In a bowl, you’ll combing the rest of the crust ingredients – yogurt, water, and lemon juice.
- Then, you add the flour mixture to the yogurt mixture and use your hands to form the dough into a ball.
- Next, wrap the dough in plastic wrap and freeze for 20 minutes (did you know you can also freeze pie dough if you want to make it ahead of time?). This is a good time to preheat the oven.
- Meanwhile, prepare the filling by whisking the almond meal, flour, and sugar together in a bowl.
- Roll the dough on a well floured surface into a 12 inch circle.
- Transfer dough to lined baking sheet. Spread the almond meal on top, leaving a 2 inch border.
- Arrange strawberries over the mixture and dust with sugar.
- Fold over the edges of dough, pleating to make it fit.
- Whisk together egg yolk and water. Brush over the crust and bake.
- Cool for at least 15 minutes before serving so it cuts easier.

Can I Use Frozen Strawberries?
I don’t typically recommend using frozen strawberries in place of fresh in a recipe like this Strawberry Galette because frozen fruits can often be watery after thawing and cause the crust to become soggy.
My advice if you wish to experiment with this substitution is to thaw the frozen strawberries first, and then drain any excess liquid before proceeding with preparing the galette.
If you find that your filling is too liquidy and causing your crust to be soggy, then I would suggest adding some extra flour or some cornstarch or arrowroot powder to the sugar and almond meal mixture to help thicken the filling.
Can I Substitute a Different Fruit for Strawberries?
Yes, you could definitely try making this summer galette recipe with fruit besides strawberries! Here are some ideas that I think would work well for this summery galette:
- Blackberries
- Blueberries
- Raspberries
- Peaches
- Nectarines
- Apricots
- Cherries
- Plums
If using a fruit that has a pit, just make sure to remove it first. Larger fruits, like peaches, nectarines, apricots, and plums will need to be sliced first.
You can also combine a variety of fruits. Peaches go well with berries and a variety of berries work well for a mixed berry option.
Typically I don’t recommend making a bunch of substitutions when preparing a new recipe. When making substitutes, you won’t know if you don’t like the recipe or if the recipe didn’t turn out due to a preparation mistake, an ill effect from the substitute, or something else.
However, if you do choose to make substitutions in a recipe, I recommend only making one substitute at a time so you don’t have a building effect of multiple poor substitutions.
What Are Other Types of Galettes?
If you don’t have strawberries on hand and would like to try a different galette recipe, here are a few others that I have here on the website:
- Apricot Thyme Galette – I don’t love apricots raw, but when cooked they take on an amazing sweetness that I love in this recipe.
- Triple Lemon Berry Galette – This recipe has a mix of raspberries, blueberries, and blackberries with lemon zest in a crust with ground almonds and cinnamon. It is gorgeous with its bright berry colors!
- Cinnamon Pear Galette with Almond Oat Crust – this is a great fall galette to make. I use red pears and leave the skin on for color, but you can use green or a mix of the two.
What to Serve with Strawberry Galette
I like my galette served with a big dollop of lightly sweetened, freshly whipped cream, but this galette can be dressed up a number of ways.
Strawberry tastes great with fresh herbs. Try adding a bit of chopped fresh mint sprinkled on top of each slice just before serving.
Strawberry and Basil are also natural flavor compliments, so you could add some fresh chopped basil along with your pile of whipped cream. For extra fancy flavors, try drizzling a bit of balsamic syrup to go along with the basil.
For something more decadent, this tastes so good with chocolate or caramel sauce drizzled over the top and a scoop of vanilla ice cream.
What to Do With Leftover Fresh Strawberry Galette
We don’t usually have leftovers of this strawberry galette because our crew loves it so much, but if you do have leftovers I recommend these storage methods:
- Transfer the leftovers to a plate and cover it loosely with plastic wrap. Store it on the counter at room temperatures for up to 2 days.
- For longer storage, you can also keep leftovers in the refrigerator. The galette leftovers will last about 4-5 days when refrigerated. If you refrigerate, it is best to let leftovers come to room temperature before serving, or microwave for a few seconds to warm.
- Note: leftovers will typically have a softer crust than fresh out of the oven.
When we do have pie or galette leftovers, I personally love to eat a slice for breakfast with a big scoop of greek yogurt on the side (instead of whipped cream, since it is breakfast time!).

Fresh Strawberry Galette
This Fresh Strawberry Galette with Almond Crust emphasizes the sweet juiciness of the strawberries without much added sugar.
Ingredients
For the Buttery Crust:
- 1 1/4 cup all purpose flour
- 1/4 teaspoon salt
- 8 tablespoons frozen, unsalted butter, cut into small pieces
- 1/4 cup plain Greek yogurt
- 1/4 cup ice cold water
- 2 teaspoons lemon juice
For the Strawberry Filling:
- 3 1/2 cups fresh strawberries, washed, hulled, and sliced
- 1/2 cup ground almonds
- 2 tablespoons flour
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
For the Egg Wash:
- 1 egg yolk
- 1 teaspoon water
- 1 tablespoon coarse sugar, such as turbinado
Instructions
To Make the Strawberry Galette Crust
- To prepare crust, combine flour and salt in the bowl of a food processor.
- Pulse twice to combine.
- Add butter and pulse until mixture resembles coarse meal.
- Transfer mixture to a large bowl.
- In a smaller bowl, whisk together yogurt, water, and lemon juice.
- Pour over flour mixture and use hands or a wooden spoon to form dough into a ball.
- Wrap in plastic and store in freezer for 20 minutes.
- Line a baking sheet with parchment paper and set aside.
- On a well floured surface, roll the chilled dough into a 12-inch circle, trimming edges until smooth.
- Transfer dough to lined baking sheet.
Preparing the Strawberry Filling
- To prepare filling, whisk together almond meal, flour, 1/4 cup sugar, and vanilla extract in a small bowl.
- Leaving a 2-3 inch border, spread the almond meal mixture evenly over dough.
- Arrange strawberries over the mixture and dust with sugar.
Baking the Strawberry Galette
- Preheat oven to 400 degrees Fahrenheit.
- Fold over the edges of dough, pleating to make it fit.
- Whisk together egg yolk and water.
- Brush over the crust, then sprinkle with the turbinado sugar.
- Bake for 30-40 minutes or until crust is puffy and golden brown.
- Let rest for 15 minutes before slicing.
- Serve with a scoop of vanilla ice cream or a dollop of whipped cream.

Looks delicious, if you baked this the night before and put in fridge overnight, would it be ok or go soggy?

It is definitely best served the day of baking. To save time, you can prepare the crust dough ahead of time and chill it overnight in the fridge, then roll it out the next day when you get ready to bake. You can also clean and slice the strawberries in advance and store in the fridge .
