Creating This Brownie Trifle Recipe
Valentine’s Day with kids on a weeknight is always a tricky thing.
So I thought I’d share with you one of my go-to, SUPER EASY, favorite dessert recipes: Raspberry Brownie Trifle with Mascarpone Whip.
It’s adapted from a great cookbook called Desserts 4 Today: Flavorful Desserts with Just Four Ingredients, by Abby Dodge. Abby’s version is a lot simpler, and still delicious.
I wanted to kick things up a notch by adding the brownie chunks and some orange zest for drool-worthy flavor.
Desserts 4 Today is a fabulous dessert cookbook for easy entertaining. Each of the 125 recipes in Abby’s new book have only 4 ingredients each (all of which are readily available), and yet they’re still sophisticated and delicious.
It just proves that simple does not have to be boring. Although I jazzed up the original recipe, I still kept this brownie dessert recipe super simple.
Feel free to simplify as you see fit or dress it up even more.

Even though this recipe has three parts, it is still really simple to prepare. Here’s an overview of the simple ingredients you’ll need to make this:
For the Brownies
For the Mascarpone Whip
- Powdered Sugar
- Mascarpone Cheese
- Heavy Whipping Cream
- Vanilla Bean Paste
For the Orange Scented Raspberries
- Fresh or Frozen Raspberries
- Granulated Sugar
- Orange Zest

How to Make Raspberry Brownie Trifle
Each step to this brownie dessert is easy! Here’s an overview of how I made the trifles:
- Prepare your favorite homemade brownies (homemade or boxed work!), then cut them into about 3/4- to 1-inch cubes once cool. Set aside.
- Combine the raspberries, orange zest, and 1/4 cup sugar in a bowl. Stir until well-mixed.
- In a medium bowl, combine the mascarpone, heavy cream, orange oil, vanilla, and 1/4 cup of sugar. Beat until medium-firm peaks form.
- To assemble, place a few brownie chunks in the bottom of six individual dessert cups.
- Top the brownies with about 2 1/2 tablespoons of the mascarpone mixture, then with about 3 tablespoons of raspberries.
- Repeat until all the elements have been evenly divided among the cups. Refrigerate until ready to serve.

Tips for Making the Best Brownie Trifles
- Line the baking pan with parchment paper when baking the brownies. This makes it super simple to remove the brownies to cut them.
- I used powdered sugar to make the mascarpone whipped cream because I like that you don’t have any accidental sugar granules that don’t dissolve. However, you can use granulated sugar as well.
- Small juice glasses, mason jars, wine glasses, martini glasses, and couple glasses are perfect for assembling this easy brownie dessert.
- You can also serve this in a large glass bowl or glass trifle bowl, but I think mini, individual servings are cute for entertaining.

Can I Use Store-Bought Brownies?
Sure! This homemade brownie recipe is one of my favorite brownie recipes, but you can make this layered dessert using any brownie pieces.
Just prepare the boxed mix according to package directions, then cool the pan of brownies, and cut into 1-inch squares.
Do I Have to Make this Brownie Trifle with Raspberries?
We love the combination of chocolate and raspberry!
If fresh berries aren’t your thing, you could definitely swap out the raspberries for: chocolate sauce, chopped chocolate bar, chopped heath bars, caramel sauce, or Reese’s peanut butter cups.
Can these Brownie Trifles be Made Gluten-Free?
Very easily! Simply follow your favorite gluten-free brownie recipe or buy a boxed gluten-free brownie mix at the grocery store.
What Can I Substitute for Mascarpone?
Cream cheese is the best substitute for mascarpone.
The flavor profile and texture will be slightly different, but this decadent dessert will still taste amazing!
How Should I Garnish this Trifle Dessert?
If you would like a little something extra on top of the trifle, try some chocolate shavings or chocolate curls.
Can I Prepare this Brownie Trifle Dessert in Advance?
Yes! The beauty of this recipe is that the brownie and orange-sceneted raspberries can be prepared ahead of time.
Perfect for doing during the day when kids are in school or napping. When the time comes, you can just whip up the mascarpone layer and assemble.

Raspberry Brownie Trifle
In this Raspberry Brownie Trifle with Mascarpone Whip, layers of fudgy brownies are alternated with with mascarpone whipped cream and raspberries for a delightful dessert.
Ingredients
For the Brownies:
- 1 recipe: Homemade Fudgy Brownies
For the Raspberries:
- 18 ounces Fresh or Frozen Raspberries
- 1 teaspoon Fresh Orange Zest
- 1/4 cup Granulated Sugar
For the Mascarpone Whip:
- 8 ounces Mascarpone Cheese
- 1/4 cup Powdered Sugar
- 3/4 cup Heavy Cream
- 1 teaspoon Vanilla Bean Paste
Instructions
Make the Brownie Chunks
- Prepare your favorite brownies - mine are Homemade Fudgy Brownies.
- Cool and then cut them into about 3/4" to 1" cubes. Set aside.
Prepare the Orange Scented Raspberries
- Combine the raspberries, orange zest, and 1/4 cup granulated sugar in a bowl.
- Stir until well-mixed, and set aside.
Make the Mascarpone Whip
- In a medium bowl, combine the mascarpone, heavy cream, vanilla bean paste, and 1/4 cup of powdered sugar
- Beat the mascarpone mixture with an electric mixer until medium-firm peaks form.
Assemble the Brownie Trifle
- To assemble, place a few brownie chunks in the bottom of 6 individual dessert glasses.
- Top the brownie layer with about 2 1/2 tablespoons of the mascarpone mixture, then with about 3 tablespoons of raspberries with accumulated juices.
- Repeat until all the elements have been evenly divided among the cups.
- Refrigerate until serving. Serve chilled.
Notes
You can also serve this in a large trifle bowl, but I think mini, individual servings are cute for entertaining.
